As much as I’m into craft beers these days, I think I may be even more into the craft cocktail scene.  Homemade syrups, tinctures and bitters, along with unique twists on classic cocktails make my day.

With Halloween right around the corner, I thought it would be fun to riff on one of my favorite cocktails – the margarita.  In the past, I’ve shared with you a favorite summer version, with fresh pureed watermelon.  And I’ll never say no to a spicy pineapple margarita.  But Halloween demands something extraordinary.   Dark and creepy.  With a dash of spooky.

The result?  This Midnight Margarita.  Classic margarita flavors turn dark as night and get a touch of salty brininess thanks to squid ink paste.  Don’t tell your guests, and they won’t know it’s in there.  Or creep ’em out just a tad and tell them right before they take the first sip.  Talk about a trick AND a treat.

Find squid ink paste on Amazon.  It’s affordable, and would also be great in a risotto or in homemade pasta dough.

Midnight Margarita

Squid ink paste lends this Midnight Margarita it's color and a perfect salty-brininess in this black-as-night Halloween party cocktail.

Prepare the Squid Ink Tincture by coming 8 grams of squid ink, 4 teaspoons of water, and 7 drops of agave syrup in a porcelain or glass container. The squid ink will stain plastic.   Whisk together until smooth.

Fill a shaker up halfway with ice.  Add 1/2 ounce of the squid ink tincture, 1.5 ounces of lime juice, 1 ounce of agave syrup, 3 ounces of tequila, and 2 egg whites.  Shake vigorously until well blended.  Drain the mixture into a container.  Empty the ice from the shaker, then pour the cocktail back into the shaker.  Shake again until the egg white gets super-foamy.

Pour into two margarita glasses.  Enjoy, if you dare!

PS:  If you wanna be discreet about the use of squid ink, garnish with blackberries… everyone will assume that’s where the color comes from.  #bwahahaha

Yield: 2 cocktails

Ingredients

  • Squid Ink Tincture:
  • 8 grams of Squid Ink Paste
  • 4 tsp. water
  • 7 drops of agave syrup
  • For the Cocktail:
  • 1/2 ounce squid ink tincture
  • 1.5 ounce lime juice
  • 1 ounce agave syrup
  • 3 ounces tequila
  • 2 egg whites

    What is the ingredient size for a pitcher of this to serve for 6-7 adults?

      Hi Hall – you can try using a pitcher like the one from the link below, but I prefer to use a shaker to get the egg whites frothy!
