Coming off of the holidays can be tough.  Especially as someone who gave up exercise and mindful eating for a good two months.  January is a reality check.  My body aches with the torture of getting back into a workout routine and I’m simply hungry.  The soup and salads I’ve been substituting for macaroni and cheese and holiday ham just ain’t cutting it.

Which is why I’m thrilled that Sunday means football and comfort food snacking in this house.  While I don’t aim to blow the week’s efforts in calories and laziness during the game, I do allow myself to enjoy some of my favorite foods, and but with a lighter twist to what would normally be a diet-blowing recipe.

Hence this Loaded Hummus recipe.  I love hummus, especially when it’s homemade.  It’s so easy to make, and I usually have all of the ingredients on hand in my pantry. To make ordinary hummus worthy of Football Sunday, however, we’re taking it up a notch.

Loaded Hummus with Spiced Lamb and Veggies is the Game Day appetizer you need to serve this year.  Serve it with veggies or pita chips for a winning flavor combo!

We’re loading ‘er up with spiced ground lamb, lots of fresh veggies, and Mezzetta Pitted Greek Kalamata Olives, Imported Greek Golden Peperoncini and Deli-Sliced Tamed Jalapeño Peppers.  It’s a WINNING flavor combo, no matter which team takes the game.

Loaded Hummus with Spiced Lamb and Veggies

This Loaded Hummus recipe is super easy to make.  Start by browning the lamb.  If you’re not a lamb fan (or can’t find ground lamb) just substitute lean ground beef – no biggie!  Heat a large skillet over medium-high heat, coat with cooking spray and add the meat.  Break it up with a wooden spatula while cooking.

There shouldn’t be too much liquid left in the pan when the meat is done browning, so don’t drain it if you can help it!   Once brown, add in the spices – garlic powder, onion powder, cumin, oregano, cinnamon, and salt and pepper to taste.  Reduce the heat to medium and continue cooking until fragrant and the spices are mixed throughout.  Remove from heat.

To a food processor, add drained garbanzo beans, lemon juice, water, tahini, cumin, olive, garlic, and salt.  Puree until smooth, adding an additional splash of olive oil or water if needed.

On a large platter, dollop out the hummus and spoon on the spiced lamb.

Top with chopped onions, sliced cucumbers, feta, olives, peperoncini, and jalapeños.  Serve with veggie sticks and pita chips.  Enjoy!

Loaded Hummus with Spiced Lamb

Yield: 4-6 servings

Loaded Hummus with Spiced Lamb and Veggies is the Game Day appetizer you need to serve this year.  Serve it with veggies or pita chips for a winning flavor combo!

Ingredients

  • For the spiced lamb:
  • 1 lb. ground lamb (or lean ground beef)
  • 1 tsp. cumin
  • 1 tsp. oregano
  • 1/2 tsp. garlic powder
  • 1/2 tsp. cinnamon
  • 1/2 tsp. onion powder
  • salt and pepper to taste
  • For the hummus:
  • 3 Tbsp. lemon juice
  • 3 Tbsp. water
  • 2 Tbsp. tahini
  • 1 tsp. cumin
  • 2 tsp. olive oil
  • 2 cloves garlic
  • 1 can drained garbanzo beans
  • salt and pepper to taste
  • For the platter:
  • Mezzetta Pitted Greek Kalamata Olives
  • Mezzetta Imported Greek Golden Peperoncini
  • Mezzetta Deli-Sliced Tamed Jalapeño Peppers
  • Additional veggies: Sliced red onion, Chopped Persian cucumbers & Crumbled Feta

Instructions

  1. This Loaded Hummus recipe is super easy to make.  Start by browning the lamb.  If you're not a lamb fan, or can't by ground lamb, just substitute lean ground beef - no biggie!  Heat a large skillet over medium-high heat, coat with cooking spray and add the meat.  Break it up with a wooden spatula while cooking. 
  2.
