I easily get in a cooking rut in the summer. A protein and veggie on the grill. Rice or potato to go-with. It’s easy and well received by all, but after a few days (or weeks) of this, I start to crave something a little bit more… fun. And by fun, I don’t mean complicated, I just mean something with bread… and cheese. Because goodness knows, I looooove me some cheese.

You know where this is going, right? Yep, we’re cooking up homemade Summer Pizzas on the grill – with ingredients inspired by the season and Sargento® Reserve Series™ cheeses available in the dairy section at your local Harris Teeter.

Sargento Reserve Series cheeses are aged to reach full flavor and texture potential. We’re using just a few ingredients on our Summer Pizzas, so each topping needs to be perfect. The Reserve Series Shredded 18-Month Aged Cheddar cheese is incredibly rich and savory. Aged to the just the right level of sharpness it lends great flavor to most dishes, but is especially great when melted on top of our grilled pizza dough!

Don’t skip the Sargento Reserve Series Shaved 14-Month Aged Parmesan cheese! Aged for 14 months to create a rich, nutty flavor that adds extraordinary taste to all your recipes and is the perfect complement to fresh summer veggies on our pizza. I’m digging the long shaves of the Parmesan!  

Can you really cook these Summer Pizzas on the grill?

YES! And it’s much easier, tastier and way more fun than doing it in the oven. Just make sure you get your grill preheated and the grates clean. I like making individual pizzas when grilling, which makes the dough a lot easier to manage.

Plus, you’ll get the added bonus of picking your own toppings! After rolling out the dough, you simply cook it on one side for just a minute or two – you want nice char marks.  Remove the dough, flip ’em over and add your toppings and cheeses to the pre-grilled side.

Return to the grill to melt the cheese.

These Summer Pizzas done on the grill are a great busy week night meal, but are also perfect for entertaining. Simply roll out the dough and pre-cook one side.  Let guests load up their individual pizzas to their liking and finish them off on the grill. 

I also love serving these as an appetizer for summer cookouts.  When that’s the case we call it ‘flatbread’ because it sounds fancier like that. 😉

Summer Pizzas for the Grill

Yield: 8 individual pizzas

Mix and match seasonal produce for these incredibly tasty Summer Pizzas that we're cooking up on the grill.  With just a few quality ingredients, these are easy to make and even easier to enjoy!

Ingredients

  • 2 balls of 1 lb. fresh pizza dough
  • Sargento Reserve Series Shaved 14-Month Aged Parmesan Cheese, 5 oz
  • Sargento Reserve Series Shredded 18-Month Aged Cheddar Cheese, 6 oz
  • 1 Tbsp. tomato sauce per individual pizza
  • Summer veggies (we used sliced zucchini, sliced yellow squash, sliced cherry tomatoes, and fresh basil)

Instructions

  1. Preheat your grill to 500 degrees Fahrenheit and ensure your grill grates are clean.
  2. Divide each ball into quarters and roll them out to make thin crust pizzas. Feel free to use flour to dust the dough as needed. You'll have a total of 8 rounds.
  3. Grease the grates, then add the pizzas. Cook for 1-2 minutes or until they begin to turn lightly golden on the bottom and have nice char marks.
  4. Remove the dough from the grill onto a cookie sheet or cutting board, grill mark sides UP.
  5. Top each pizza with Sargento Reserve Series Shredded 18-Month Aged Cheddar Cheese. Add the veggies and herbs, then scatter Sargento Reserve Series Shaved 14-Month Aged Parmesan Cheese on top.
  6. Lower the heat on the grill to medium and return the pizzas to the grill. Cook until the bottoms are cooked and crispy and the cheese has melted on top.
  7. Enjoy!
