I love summer, I really, really do. But like most moms, I’m feeling the drain of off-balanced routines and sun-worn kids. That’s the inspiration behind these Easy Grilled Veggie Foil Packets. You can toss all the vegetables you bought with good intention earlier in the week into one meal. And with Better Than Bouillon, you can get some serious flavor without any extra ingredients.
I’ve been using Better Than Bouillon for at least a decade. I keep a few flavors in my pantry AT ALL TIMES. Back in the days when I did the whole “vegan week” once a month, it was my salvation. With a wide variety of bases, including Chicken, Beef, Vegetable, Garlic, Fish and Mushroom, big flavor can be brought to any dish. Several are certified vegan, providing options for many diets.
An alternative to canned broths (that expire quickly once opened) or cubes that can be gritty or not dissolve completely, Better Than Bouillon helps me out in many of my recipes, but it’s surprisingly awesome for recipes on the grill (think marinades, rubs and sauces).
Tips for Cooking Easy Grilled Veggie Foil Packets
I opted to use Roasted Garlic Better Than Bouillon for my Grilled Veggie Foil Packets, but any will do!
You can also mix and match your favorite veggies to create personalized packets that your family likes. The keys are to make sure vegetables are cut uniformly and to par-cook root vegetables that take longer to soften.
Feel free to add fresh herbs to round out the dish. I have TONS of rosemary in the garden, so I snipped a few sprigs to add color and flavor. It’s totally not necessary, but if you want to serve these Grilled Veggie Foil Packets for guests, it adds a ‘fancy’ touch!
