Tuna + Zucchini = ?

It’s been a few days since I’ve done a regular grocery trip. And by a few days, I mean a few weeks. We’re struggling in the fridge department at the Harding house. On Friday, we had grand plans to go out to dinner, but then got cold feet. Literally. Who needs to go out when it’s cold outside and there’s a fireplace inside? So, we ended up needing to prepare a meal at home. Sure, I could have gone the pizza/Chinese delivery route, but that would have been too easy. Fortunately for me, I stumbled upon a website that although didn’t make dinner as easy as a phone call, it sure made it a heck of a lot easier than it could have been.

Supercook.com
is a website I’ll be visiting frequently. It’s really darn handy. Enter in the ingredients you have in your fridge, emphasize the ones you definitely plan to use, even compile a list of things you don’t have in the fridge, and SuperCook will spit back recipes that you can make with the on-hand ingredients. Friday night I happened to have a half-pound of breakfast sausage, mushrooms and a few random cheeses. The baked pasta recipe the website suggested with those ingredients was nothing short of fabulous. We’ll be making it again and will actually plan on having those ingredients on hand.

If your kitchen is stocked up on shrimp and carrots, the website may suggest Nigerian Coconut Shrimp Rice. Got white beans and broccoli? How about Broccoli, Cannellini Bean and Cheddar Soup? The possibilities are endless. I’m hoping to get by on a few more days with random canned ingredients, a few produce items, and frozen proteins that I have in the kitchen. Dinner may get a little bizarre, but I’m always up for trying new things. Especially websites that help me avoid grocery stores, coupon clipping and listening to my toddler yell about getting the cart that looks like a truck.

P.S. The answer to the equation Tuna + Zucchini = ? The answer: Dilly Tuna Zucchini Patties. May be worth trying if that’s what’s left in your fridge.
