School may be out, but who doesn’t love a Friday? {Raise my hand silently in shame.}
Fridays during the summer for me mean struggling through a work day with no nanny and three young children running amuck in the house. It means counting down the hours ’til Jonnie gets home from work so I can cower in the bathroom for fifteen minutes without being disturbed.
Admittedly, our Fridays need a little structure. And, I’ve found it by building activity blocks during the day. The most coveted of those hours? For the big boys it’s Kindle time. For James (who turns 3 this summer!!!), it’s tuning in to watch Puppy Dog Pals on Disney Junior.
Sure, we can tune in any time to the Disney Junior Channel, but did you know, that new episodes of Disney Junior shows will premiere on Disney Channel this summer during the morning hours (like the 6-10 am hour when I need to be sleeping)? Yup.
Throughout the summer, little ones can enjoy Disney Junior episode premieres every “FRiYAY.” And although his big brothers probably wouldn’t want me sharing this… they can’t help but tune in too. Especially when it’s Puppy Dog Pals.
In Puppy Dog Pals, fun-loving puppy brothers Bingo and Rolly go on adventures throughout their neighborhood and around the world as a way to help quench their thrill-seeking appetites.
When isn’t life more fun when you’ve got someone to share it with? And, because I can always take a story and relate it to food, we started talking about our favorite foods that are better together than they are by themselves.
Cookies and milk. French fries and ketchup. Peanut Butter and Jelly. Grilled Cheese.
Grilled Cheese? To which my son responded, bread and cheese mom. Definitely better together. This got me thinking…. what if we take two fabulous combos and combine them?!?! It’s time to have some fun in the kitchen.
Bingo and Rolly’s Peanut Butter & Jelly Grilled Cheese
Preheat a griddle to medium heat. Butter one side of each piece of bread.
Once the grill is hot, lay 4 pieces of bread onto the griddle and place down the slices of cheese on top. Allow to cook until the bottoms of the bread are golden and the cheese begins to melt slightly.
Meanwhile, top the remaining pieces of bread with peanut butter and jelly (on the non-buttered side). Place the PB&J bread on top of the cheese and flip, to toast the other side.
The sandwiches are done when both sides of the bread are golden and the cheese is melted.
Remove from heat and allow to cool 1-2 minutes before slicing. And make sure to warn the little ones that the jelly may be hot!
Peanut Butter and Jelly Grilled Cheese

- 8 slices of whole wheat bread
- 3 tablespoons of butter, melted
- 6 ounces of aged white cheddar, thinly sliced
- 1/3 cup peanut butter
- 1/3 cup strawberry jelly
Instructions
- Preheat a griddle to medium heat. Butter one side of each bread.
