Top Five List: Raquel Durban Survives the “Newborn Stage”

As a new mommy, I have found every moment with my daughter, Ava, to be insanely awesome.  My Top Five List is a small tribute to how my husband and I have survived the sleepless nights without eating frozen pizzas every night. 🙂

1.  Burp rags are multi-purpose.  One afternoon my mother-in-law, Darlene, came over visit.  Ava was having her 4pm scheduled melt down and I needed a break from the purple crying.  I handed Darlene a bottle and burp cloth to let her work her magic.  Within about 30 seconds there was silence!  

I ran in thinking “Ahhh! what happened to my baby!?!” To my pleasant surprise Ava was calmly drinking from a bottle, but with a burp cloth over her eyes.  I thought a dark room would be enough, must be a new mom thing.  Apparently my child requires TOTAL darkness and requires a “baby sleep mask”.  Best visit with Ava’s grandma 

2. Cuticle clippers are awesome nail clippers for little ones.

3. Who says you can’t have cake for breakfast?!  As a registered dietitian and small business owner I pride myself on practicing what I preach – “everything in moderation”.  This is one of my family’s all time favorite cake recipes from Martha Stewart:

Zucchini Bundt Cake with Orange Glaze:
Ingredients:
1 1/2 sticks unsalted butter, melted, plus more for pan
2 1/2 cups AP flour, plus more for pan
2 1/2 teaspoons baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon anise seeds (I did not use)
2 medium zucchini
salt
1/8 teaspoon ground cardamom (I did not use)
1 1/2 cups sugar
1/2 teaspoon orange zest plus 1 tablespoon orange juice
3 large eggs

Directions:
1. Preheat oven to 325.  Brush 6-8 cup bundt pan with butter and dust with flour. 
2. Whisk flour, baking powder, spices and 1 teaspoon salt.
3. Grate zucchini on box grater and squeeze out excess water with ricer or towel. (need 2 1/2 cups of zucchini)
4. Stir together eggs and sugar. Add melted butter, zucchini, orange zest and juice.
5. Pour into pan
6. Bake for about 1 hour until toothpick comes out clean.
7.  Let cool on wire rack for at least 30 minutes.  Rub knife along edges of pan prior to inverting.

Glaze:
1 1/4 cup powdered sugar
1/4 teaspoon orange zest
3 tablespoons orange juice
milk (just enough to thin out the glaze)

1. Whisk together the ingredients and drizzle over cake.

INDULGE!

4.  Kid constipated?  We have found that Ava will poop with no problems when we sit her in her bumbo seat. 

5. I make my own baby food and my favorite recipe book is First Meals  by Annabel Karmel.  It offers fabulous ideas from children up to age 7.
