Menus on Mondays: 11/5/12 and Recipe Linkup

November 5th is my husband’s birthday.  In our family, you get what you want for dinner on your birthday.  You can be extravagant or simple.  You know what my husband asks for?  Every year?  Grilled cheese and tomato soup.  Then we’ve got November 6th… time to hit the polls.  This requires a simple meal that you can eat on the go so you can enter your ballot if time gets away from you the rest of the day.  The rest of the week doesn’t hold anything exceptional for me except for busy evenings and the feeling of fall… hence quick comfort foods.

Monday: Vegetarian (& Jon’s birthday request)

Tuesday: Take it to the Polls, (Optional) Vegan on the Go

Wednesday:  Crock Pot Comfort Food

w/ Steamed Sugar Snap Peas and Brown Rice

Thursday: Make-Ahead Vegetarian

Mama Dip’s Macaroni and Cheese (I plan to add pureed butternut squash to the mix)
Roasted Broccoli (Toss broccoli florets in olive oil and salt & pepper.  Roast at 450 degrees 20 minutes, flipping once.)

Friday: Pizza Pizza!  Optional Vegetarian

Marinated Artichoke Pizza (add some sliced proscuitto for protein lovers!)
Arugala Salad with Olive Oil and Balsamic Vinegar
