For those of you chomping at the bit for the newest Forks & Folly recipe, I hate that I’ve been a little quiet on the blog this summer.  I’ve been able to share a few great recipes (hello easy baby back ribs and these amazing breakfast nachos), but it’s not been at my typical pace.

Why? Because I’ve been a whirling dervish in the kitchen, with barely a moment to catch my own breath.  That’s what happens when one of your favorite clients calls you up and asks for dozens of produce-focused recipes.  Dozens and dozens.  Project complete, I now have bookoos (I googled that, but it still looks funny written out) of fruit and veggie focused recipes.

I liked them all.  It’s true.  But out of the nearly 50 recipes I prepped, cooked, and photographed, some of them really stood out.  Those, I’m gonna share with y’all.  Because you need to add these to your menu plans. STAT.

First up, is this simple and elegant Strawberry & Avocado Spinach Salad.  Bright red strawberries from Patterson Farms steal this show.  But don’t omit anything in this recipe.  It all goes together so well!  Make a mini-version for a stay-at-home lunch or serve this with grilled chicken or steak while entertaining!

Instructions

Toss and serve! But, if you're serving this for guests, assemble all of the dry ingredients, then toss the salad with dressing just before serving so the spinach doesn't wilt!
