This Menus on Mondays Menu Plan will naturally be a little bit different. With Christmas Eve and Christmas thrown in, plus leftovers and massive amounts of family time, this week of menus is all about comfort, tradition, and lazing around the house with those you love.
It’ll be a quite week on Mom Favorites. I’ll be doing what you’ll be doing: spending time with my family, playing with my boys, and cooking, eating, and drinking lots of wine.
Here’s a peek of what I’ll be making this week. Borrow a recipe or ten. They’re all good. I hope you have a delightful week of friends and family and everything MERRY!

Christmas Breakfast Casserole (post-Present Opening)
Fresh Berries

Christmas dinner at Grandma’s
Wednesday:
Skirt Steak Tacos with Sesame Pineapple Slaw (using leftover skirt steak from Christmas Even Dinner instead of roasting a pork butt)
Edamame with Sea Salt
Thai Marinated Cucumbers
Thursday: Vegetarian
Veggie Chili (my semi-famous recipe)
(with the mandatory toppings: Greek yogurt, cheddar cheese, scallions and red onions)
Jalapeno Cornbread
Friday: Vegetarian, Optional Vegan
Veggie Shepherd’s Pie
Celery, Parsley and Raisin Salad
Weekend Cooking
Cantaloupe wrapped with Proscuitto
Crab and Gnocchi Gratin
Roasted Carrots and Parsnips: Toss a pound of each carrots and parsnips peeled, and quartered with olive oil, salt, pepper and Garam Masala. Roast at 450 degrees for 25 minutes, flipping once.
White Chocolate Cranberry Tart
