I meant it when I said that I seriously plan out my meals to ensure I eat the rainbow of colors. Beyond the plate simply being more visually appealing, it’s also just a healthy way to eat. And, I’m not talking fruit loops. I’m talking berries and veggies, whole grains and seafood. 🙂
Because it’s fresh on my mind, I thought it would be fun to come up with easy-to-make weeknight dinners with the rainbow in mind, and then a more “decadent” weekend meal that would be great for entertaining.
