I meant it when I said that I seriously plan out my meals to ensure I eat the rainbow of colors. Beyond the plate simply being more visually appealing, it’s also just a healthy way to eat. And, I’m not talking fruit loops. I’m talking berries and veggies, whole grains and seafood. 🙂
Because it’s fresh on my mind, I thought it would be fun to come up with easy-to-make weeknight dinners with the rainbow in mind, and then a more “decadent” weekend meal that would be great for entertaining. Let me know if you make something that you love or if you have problems with a recipe. I’m cooking them this week too, so I’d be glad to offer suggestions or substitutions! Beet Pizza with Arugala and Goat Cheese (the kids never notice trying new things when it’s on a pizza!)
