As you know from my blog, I cook foods from around the world.  I adore Asian foods.  Pasta is my spirit carb.  And tacos?  Let’s eat them every day including Tuesday. 

My kids are used to eating something random and new almost every night.  But our new exchange student, Mirriam, from Ghana?  Yeah, it’s a little overwhelming.  Imagine being 16 without having had cheese.  Or pizza, a hamburger or a hot dog.  Food is intimidating AND exciting when everything is new!

We’ve been taking baby steps and making progress.  I’ve been learning more about cuisine from Ghana (stay tuned for some African stews coming to a blog near you) and incorporating familiar ingredients into my recipes.

With September being Hispanic Heritage Month, I’ve been sharing more Latin flavors with our new student… and she’s been loving them.  Slow cooked meats, tortillas, beans, and avocados are all right up her alley.  So, with that in mind, I decided to make a Cuban-style Mojo Slow Cooker Pork Roast.  

With fork-tender pork, Mojo marinade (featuring garlic, citrus and cilantro), and tortillas, it’s a recipe my whole family loves, including Mirriam!

How to Cook Cuban Mojo Slow Cooker Pork Roast

There are just a few steps required for Mojo Slow Cooker Pork Roast perfection!  The first thing I do is thoroughly season the roast.  Coat all sides with salt and pepper.  Don’t be stingy.  

After the meat is seasoned, sear the meat on all sides in a drizzle of oil.  You want the meat to have a nice dark golden sear.  If you have a crockpot insert that can go on the stovetop… perfect!  If not, use another skillet and transfer.  I know it’s one more dish, but it makes such a big difference!

Although it’s not necessary, adding orange slices around and on top of the roast keep the meat extra moist.  I like to throw a few sprigs of cilantro in there too.  Mostly because it looks pretty in the picture, but also because I like cilantro. 😉

You’ll trim the meat before seasoning and putting it in the crock pot, but after it’s done cooking, discard the juices the meat cooks in.  It can be a little greasy.  For extra flavor and sauciness, use some of the reserved mojo marinade.  It’s delicious!

Serve the Cuban Mojo Slow Cooker Pork Roast with your favorite sides.  I’ve served this with rice and beans (Mirriam’s favorite), taco-style (my boy’s favorite) and on chopped lettuce with avocado and hot sauce (my favorite).  You do you!

Keep in mind… the leftovers are almost better than they are the first time!  Save extras for quesadillas or sliders for an even quicker weeknight meal!

Cuban Mojo Slow Cooker Pork Roast

Yield: 4-6
Our Cuban-Style Mojo Slow Cooker Pork Roast bursts with the flavors of citrus, garlic and cilantro.  Fork-tender straight from the crock pot!  Serve over rice or with tortillas for an easy weeknight meal.

Ingredients

  • 4-5 lbs. bone-in pork butt, trimmed of excess fat
  • 1 Tbsp. Wesson® Vegetable Oil
  • 2 cups Badia®Mojo Marinade, plus additional for serving
  • 1 onion, finely diced
  • 1 orange, sliced
  • a few sprigs of cilantro (optional)
  • salt and pepper, to taste
  • Serve with tortillas, black beans, cilantro, and lime wedges

Instructions

  1. Preheat a skillet (or stove top safe crock pot insert) over medium high heat with the oil. Season all sides of the pork butt with salt and pepper.
  2. Sear the meat on all sides until deeply golden. Transfer the meat to the slow cooker and add onion, mojo marinade, orange slices, and cilantro (if using).
  3. Cook on HIGH for 4-6 hours or LOW for 8-10 hours.
  4. Remove the meat to a tray and gently pull the meat apart with two forks. Discard the bones. Drizzle with additional marinade and serve.
