Mardi Gras Dinner & Weekly Meal Plan for 2/3/13

This week’s Menus on Mondays weekly meal plan features a new favorite and a fun Cajun supper!

You know it’s good when it shows up on my menu just weeks after I’ve already made it.  Yeah, in our house when someone asks, “What are we having for dinner?” They really haven’t a clue! 🙂  I like to keep it that way.  It’s fun to bring something surprising to the table.  I’m hoping that the kids won’t be afraid to eat anything, and my husband and I won’t miss dining out this way quite as much.  And, I also just want all of us to be healthy. Full bellies, but filled with local, seasonal, home-cooked food.  Ya know?

This week, I’m introducing eggplant to the menu.  I know it’s not nearly as exotic as the duck and plantains of weeks’ past, but it’s exotic for me.  I’m not a super big fan of eggplant.  I’m hoping that by cooking it in a new way (nothing is ever bad in a gratin), I might like it.

P.S.  Did anyone else make that Radicchio Leek Sauce for the pasta last week?  It was rad.  Yep, I just said rad.  RAD!  There. I did it again.  Oh, and I subbed goat cheese for the fontina and LOVED it.

Anywho, here’s what’s being served at our house this week.  Let me know if you ever have a recipe from your blog (or recipe repertoire) that you’d like to have featured.  I’m always happy to accommodate!

Monday:

Shredded Cabbage and Salmon Salad

Soba Noodles with Sweet Ginger Scallion Sauce

Tuesday: Vegetarian

Cheesy Brown Rice Gratin with Zucchini and Eggplant

Roasted Mushrooms with Shallots and Herbs

Wednesday: Optional Vegan

Warm White Beans with Roasted Fennel

Sweet Potato Mash (prepare with olive oil instead of butter for vegan diets)

Thursday:

Glazed Chicken with Pineapple Rice

Steamed Asparagus with Sesame Oil Drizzle

Friday: Vegetarian and my new favorite soup!

Wild Mushroom Soup

Spinach Artichoke Flatbread

Weekend Cooking: Fat Saturday!?!
(Parents: Can’t party on Fat Tuesday? No worries, bring the party to your house this weekend with a fun Cajun dinner.)

Cocktail: Brandy Crusta (prepared whichever way you darn please)
Snack: Cajun Spiced Popcorn
Shrimp and Chicken Etoufee
Toasted Rice
Lighter King Cake Recipe
