Weekly Meal Plan: Quick and Easy Recipes

I’m going to be honest: I’m not cooking this week’s meal plan.  When this post “goes live,” I hope to be sitting under the warm Belize sun drinking some sort of very-alcoholic beverage.  But… if I were to be State-side in my kitchen after a very long day of working and taking care of kids, I’d definitely plan on making each and every one of these quick and easy recipes included in this week’s meal plan.  Not that that is much consolation for you, but, at least I’m trying to help! 🙂

I’ve got a full schedule of great blog posts for the week, so stay check back with us on MomFavorites.com throughout the week.  This momma needed a little mommy-break and some much needed alone time with her husband.  I can’t wait to come back and tell you all about my travels… I hope to avoid the bot flies {warning: high gross-ness factor} and sharks of “Shark Alley,” but instead bring back a little inspiration for Latin American cooking for a future weekly meal plan!

quick and easy dinners

Monday: (Optional Vegetarian)

Bubble Up Pizza – use your favorite pizza toppings in this delish cast-iron skillet pizza!  (Note: for me, this recipe took about twice as long as the biscuit can indicated.)

Mixed Green Salad

Tuesday: Vegetarian

Spinach and Egg Noodle Casserole

Aromatic Slow Roasted Tomatoes (recipe at bottom of post)

Wednesday:

Sesame Soy Meatballs with Steamed Sugar Snap Peas

Steamed Brown Rice (make extra for Friday’s dinner)

Thursday: Vegetarian

Black Bean Quesadillas

Chips & Salsa

Friday: One-Dish Dinner

Chicken Alfredo and Rice Casserole

Weekend Entertaining: Crock Pot Cooking

Beef Bourguignon (Oh, and frozen pearl onions, thawed are just fine!)

w/ Mashed Potatoes or Egg Noodles

Cocoa Brownies with Browned Butter

Weekend Breakfast

Overnight Maple and Brown Sugar Oatmeal

Easy Lunch Idea: My Favorite One-Person Dish

Orrecchiette with Mixed Greens and Goat Cheese
