Protein Loaded Lunch Ideas

We all have our roles to fill in this household.  Jon is the Chief Technology Officer and the Executive Camping Director.  With him lies our families’ computer, camera, kindle, wii, ipad, cell phone, network, and internet support.  That, and being responsible for taking the boys into the out of doors for overnight adventures.  I don’t pee in the woods.  If I can help it.

In turn, I’ve happily assumed the role of Chief Aesthetics Officer (interior design and outfit approver) and Executive Chef (short order cook for a family of 5).  Gotta know your strengths.

Cooking meals for my family is something I really enjoy.  It’s one way I want my boys to feel loved.  Including the hubs.  Can’t leave that guy out.  After all, he takes the kids camping!  Leaving me at home…. alone…!!!  Well, with Baby James, which is almost like being home alone since James doesn’t talk or leave his shoes lying about the house.

When it comes to making Johnny lunches, I always try and make him something that is easy for him to transport and heat up, is enough to keep him full over his long day, and is loaded with protein, as he commutes to work on his bike.

A lot of times that means leftovers.  And in this family, we love us some leftovers.  But sometimes, it means taking along a frozen entree and snacks.  Recently, I found the NEW STOUFFER’S® Fit Kitchen single-serve meals and thought they’d be a perfect option for Jon’s lunches when we don’t have leftovers to spare.

Here are some of the combos I came up with:

STOUFFER’S® Fit Kitchen Steak Fajita with Guacamole and Salsa (just press plastic wrap over the top of the guac before sealing to prevent browning)

and STOUFFER’S® Fit Kitchen Cilantro Lime Chicken with Seasoned Edamame

I love that they are hearty meals loaded with proteins (all have at least 25 grams!), yet still whip up quickly.

 

Be sure to check out all of the great varieties: Steak Fajita, Cilantro Lime Chicken, Rotisserie Seasoned Turkey, Bourbon Steak, Oven Roasted Chicken, and Monterey Chicken.  And if your man is like mine, here are a few little extra side items to throw in to round out the meal:
