My rule of thumb? Pretty much everything tastes better with an egg on it. We’ve all seen the amazing burgers with yolk dripping down…. um, yum. And, if you haven’t had a pizza loaded with crispy potatoes and fried eggs, you’re missing out. So why not dress up the more hum drum of meals and give them the richness of a perfectly cooked egg. Not only lend a little sauciness, but also a protein boost!
That’s the origin of this modified shakshuka recipe. A traditional shakshuka comes together when you poach eggs in a rich tomato sauec. I’ve swapped out the ‘maters for a variety of superfood veggies – including spinach and shiitake mushrooms for a well-rounded, eat the rainbow meal. What makes it crave-worthy though? Yep, you guessed it, put an egg (or three) on it!
Eggs are a great source of protein and beneficial vitamins and nutrients — but all eggs are not created equal. And it can be totally confusing to understand the different types of egg labeling. Green Veggie Shakshuka
Heat a large skillet over medium heat. Add 1 Tb. olive oil and the red onions. Cook until wilted and golden in parts. Move to the outside of the skillet and add the carrots and garlic. Increase the heat to medium high. Continue to cook, until the carrots are tender.
Mix in the mushrooms. Allow them to cook without stirring for 3-4 minutes, the stir and continue to cook until softened.
Add the heap of spinach, salt and pepper to the mix and cook until just wilted.
Make nests in the veggie mixture and carefully drop in each egg.
Sprinkle with feta. Partially cover and cook until the whites are set, but the yolk is runny.
Remove from heat and serve immediately.

- 1 Tb. olive oil
- 2 carrots, peeled and shredded
- 1 clove garlic, minced
- 6 oz. shiitake mushrooms, sliced
- 8 oz. baby spinach
- salt and pepper to taste
- 3-5 Handsome Brook Farm Eggs
- 1/4 cup crumbled feta
Instructions
Heat a large skillet over medium heat. Add 1 Tb. olive oil and the red onions. Cook until wilted and golden in parts. Move to the outside of the skillet and add the carrots and garlic. Increase the heat to medium high. Continue to cook, until the carrots are tender.
