Need a simple grilling recipe your whole family will love? Try this Pork & Pineapple Fajita Kabobs recipe! A great summer meal with just a few ingredients!
We’ve had some hectic evenings up in this piece. Summer! So much fun, so much to do. Who wants to be in the kitchen? Not me! And, I usually love my time in the kitchen.
These days, however, I’d rather be sitting on the porch, with my feet propped up watching the kids run around in the sprinkler. Oh, and with a margarita in my hand, of course!
Dinners in the summer have to be easy, and preferably can be managed on the grill. Oh, and with as few ingredients as possible.
With this Pork and Pineapple Fajita Kabob recipe, I think I did it. Major flavor, low maintenance, all made on the grill. You can thank me later.
After you make this awesome dinner, of course!
First, grab a Smithfield Pork Loin Filet and all of the ingredients at your local Walmart. I chose the pork marinated in the mesquite marinade, but there are many options if something else floats your boat!
When I had some free time in the afternoon, I cut the pork into chunks, along with the pineapple, red onions, and bell peppers. Save even more time by getting the pre-sliced pineapple. Gotta do what ya gotta do.
I had metal skewers to use, but if you are using wooden skewers, be sure to soak them for at least 30 minutes before loading them with your ingredients. Don’t want ’em to burn on the grill.
When putting them on the skewer, alternate ingredients and don’t squish them too tight. (That’ll lead to having some under-cooked meat and veggies. No thanks.)
Finally, drizzle the kabobs with a little olive oil, salt and pepper. Then that’s it ’til grill time, y’all!
When ready to cook, heat the grill up to medium high heat, then grill 15-20 minutes, rotating once or twice. You’ll want the pork cooked through (165 degrees is recommended), and the veggies to have a nice char.
I served this with brown rice tossed with pumpkin seeds and salsa to round out the meal.

Ingredients
- 1 Smithfield Mesquite Pork Loin Filet
- 1 red onion
- Trio of bell peppers, assorted colors
- 1 pineapple
- Olive oil, salt and pepper
