Are you in a lunch box rut?  Holy cow, if you are what you eat my four-year-old is a walking Peanut Butter and Jelly sandwich.  Not only does he just love them, but they’re so easy to make I’ve been letting him have his PB&J way for breakfast and lunch.  Shame on me.

After going through a loaf of bread in just three days, I decided it was time to see what other quick lunch ideas I could come up with that would not only satisfy his preschool palette but would be easy to pack in a lunch box and would fuel my little guy through his day.  Have you hung out with a four-year-old lately?  It’s exhausting just watching them.

My kids love a quesadilla, and if you ask me, it’s kinda like pizza.  Great hot, delish cold.  Perfect for lunch!

I consulted with my boys and we came up with three quesadilla combinations that we all love.  Whoop!  They even helped me name them!

First up, the Mexi-Dilla:

Everyone’s favorite taco toppings turned quesadilla: Shredded chicken, roasted corn, and tomatoes with REAL® Seal Queso Fresco.  Melts like a charm!

Next, the Pizza-Dilla (my boys think they were the first to come up with the name.  No need to tell them otherwise!)
