The Creative Lunchbox: Three Quesadilla Recipes for Kids

This post is brought to you in partnership with REAL® Seal. All thoughts and opinions are my own.

Are you in a lunch box rut?  Holy cow, if you are what you eat my four-year-old is a walking Peanut Butter and Jelly sandwich.  Not only does he just love them, but they’re so easy to make I’ve been letting him have his PB&J way for breakfast and lunch.  Shame on me.

After going through a loaf of bread in just three days, I decided it was time to see what other quick lunch ideas I could come up with that would not only satisfy his preschool palette but would be easy to pack in a lunch box and would fuel my little guy through his day.  Have you hung out with a four-year-old lately?  It’s exhausting just watching them.

My kids love a quesadilla, and if you ask me, it’s kinda like pizza.  Great hot, delish cold.  Perfect for lunch!

I consulted with my boys and we came up with three quesadilla combinations that we all love.  Whoop!  They even helped me name them!

First up, the Mexi-Dilla:

Everyone’s favorite taco toppings turned quesadilla: Shredded chicken, roasted corn, and tomatoes with REAL® Seal Queso Fresco.  Melts like a charm!

Next, the Pizza-Dilla (my boys think they were the first to come up with the name.  No need to tell them otherwise!)

Bust out your favorite pizza toppings for this tasty treat.  We chose Turkey Pepperoni, Mushrooms, Bell Peppers, Oregano, and REAL® Seal shredded Cheddar & Monterrey Jack.

Finally, the Dip-a-Dilla:

Love Spinach and Artichoke Dip?  Then you’ll love this!  Chopped fresh spinach, sliced artichoke hearts and REAL® Seal mozzarella.  Yum!

[…] Forks and Folly reminds us that quesadillas don’t need to be hot to be delicious, and what child doesn’t like a cheese sandwich? Serve with guacamole or salsa and you’ve got a triangle fold on Taco Tuesdays. […]
