I gotta be honest. I’m a same-breakfast-every-day kinda gal. In our house, it’s the hubs that gets most of the street cred for amazing breakfasts that the kids beg for. Waffles, pancakes, scrambled eggs. That’s his specialty.
But we can’t let him getting too high on that breakfast horse. Momma’s gotta step in and wow occasionally. And, she’s got a few tricks up her sleeve.
With a few basic NESTLÉ® baking supplies from Walmart and minimal TLC, these Pumpkin Spice Chocolate Chip Waffles will have your family singing your praises. Not only that, but you might have a new breakfast du jour too.
My favorite thing about this Pumpkin Spice Chocolate Chip Waffles recipe, besides the crispy waffle-texture and the melted chocolate? It’s that the recipe makes over a dozen waffles, perfect for freezing and quickly thawing in the microwave for busy school mornings.
I don’t know about you, but our breakfasts are frantic affairs on weekday mornings. The kids can even take the waffles with them and eat them on the way to the bus stop. No syrup needed… although, it sure is good if you’ve got the time.
Who’s the breakfast champion now? I’ll be patting myself on the back, but not before I share the recipe! Just follow these simple steps:
Mix together: Four eggs, 6 ounces of NESTLÉ® CARNATION® Evaporated Milk (I love using evaporated milk in recipes for the added richness!), 1/2 cup of vegetable oil, and 1 cup of water. To that, add baking powder and one package of Libby’s® Pumpkin Bread Kit. This kit has everything you need to whip up an amazing homemade pumpkin bread, but you know what? (It also makes uh-mazing waffles!) I also added a bag of NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels. Because… why not elevate this dish and make it totally drool-worthy!
Mix until well blended then let the batter sit for 2 minutes. Meanwhile, heat up your waffle iron. I used the medium setting. Once ready to go, pour in your batter.
For me, the waffles were done in four and a half minutes. And my, did they smell heavenly. Repeat the process until you’ve used up your batter.
If eating right away, use the icing from the Libby’s Pumpkin Bread Kit and drizzle it on top along with some maple syrup.
If storing, allow to cool completely, then wrap in wax or parchment paper, store in a bag and freeze for up to two months!
