On any normal morning, I might need to yell upstairs for the kids to come down several times before getting a response.  On a birthday morning, however, I could whisper it, and I’ll have three little ones lined up a the breakfast bar.

Why?  Because in this house, birthdays mean cupcakes for breakfast.

My Will-ster turns the big “6” tomorrow.  Yup, on April Fool’s Day.  Which is oh-so appropriate if you know the kid.  I always have a fun time with him; he makes me laugh, and he’s a jokester if ever there was one.

I thought it would only be appropriate to feature a 52 Weeks of Sweets recipe for his birthday, and what better way to celebrate an April Fool’s Birthday than with a little joke?

52 Weeks of Sweets continues with birthday Vanilla Breakfast Cupcakes for my birthday boy! With faux bacon and eggs, Vanilla Breakfast Cupcakes make the perfect April Fool's Day treat, too!

Yup, vanilla BREAKFAST cupcakes for all.  A simple and delicious vanilla cake batter is topped with royal icing and faux bacon and egg yolks for the perfect April Fool’s breakfast.  Especially if it’s your birthday. 🙂

Vanilla Breakfast Cupcakes

52 Weeks of Sweets continues with birthday Vanilla Breakfast Cupcakes for my birthday boy! With faux bacon and eggs, Vanilla Breakfast Cupcakes make the perfect April Fool's Day treat, too!

Preheat oven to 325 degrees Fahrenheit.  Place liners in cupcake pans and coat with baking spray.  Mix the dry ingredients together with a hand mixer (you can use a stand mixer, but I like having more control with the hand mixer).  Add in butter and mix until crumbly.  Next, add the eggs, one at a time, mixing after each.  Whisk the vanilla and milks together, then pour into the batter in two parts. Mix until just incorporated.

Pour batter into liners, so they are about 2/3 full.  Bake for 23-28 minutes, until a toothpick inserted in the middle comes out clean.

Allow to cool completely.  Prep the Royal Icing per package directions.

Slather royal icing on top of each cupcake then immediately top with the candy bacon and yellow candy melt.

Vanilla Breakfast Cupcakes

Yield: 2.5 dozen

52 Weeks of Sweets continues with birthday Vanilla Breakfast Cupcakes for my birthday boy!  With faux bacon and eggs, Vanilla Breakfast Cupcakes make the perfect April Fool's Day treat, too!

Ingredients

  • 1 3/4 cup cake flour
  • 1 1/4 cup all-purpose flour
  • 2 cups sugar
  • 1 tablespoon baking powder
  • 3/4 tsp. salt
  • 1 cup butter, room temperature and cut into 1" cubes
  • 4 eggs, room temperature
  • 3/4 cup 2% milk
  • 1/4 cup 1/2 and 1/2
  • 1 tablespoon vanilla
  • 1 package Royal Icing
  • 2 packages candy bacon
  • 1 package of yellow candy melts

Instructions
