Strawberry Galette with Dark Chocolate: #52WeeksofSweets, Week 13

Get carried away picking strawberries?  Use up your berry goodness in this beautiful and easy-to-make Strawberry Galette with Dark Chocolate recipe, the perfect spring and summer dessert. 

I was chatting with my neighbor the other day as she was working on a vegetable garden installation in her backyard.  “My son thought that vegetables were grown at the grocery store,” she had commented.  Ugh.  Us city-folk are so far removed from the food chain.

It was that comment that got me thinking about taking my kids to go strawberry picking.  Not only is it a fun spring activity, but it’s a fabulous learning experience and… strawberries picked from the field taste SO.MUCH.BETTER than the grocery store variety.

We got a little carried away on our berry-picking excursion.  It’s just so hard to stop when you come upon row and row of red strawberry goodness.  We ended up with buckets-full of berries.  

Strawberry Galette with Dark Chocolate

Get carried away picking strawberries? Use up your berry goodness in this beautiful and easy-to-make Strawberry Galette with Dark Chocolate recipe, the perfect spring and summer dessert.

Preheat the oven to 425 degrees Fahrenheit.  Be sure to wash and clean the berries thoroughly, then stem, hull and slice them.

Mix the sliced berries with the sugar, lemon juice and cornstarch.  Set aside for 15 minutes.

Lightly dust a pizza pan with flour.  Place one pie crust down, and press the second pie crust down on top.  Dust the surface of the crust with flour, and roll it out to expand the entire surface area of the pizza pan.

Pour the berries and juice into the center of the crust and spread it out, leaving a 2 inch rim of crust.

Fold the crust up and over the sides of the berries, working your way around the circle.  Brush the crust edges with the egg wash and sprinkle with a little extra sugar.

Place in the oven and cook for 20 minutes or so, until the crust is golden and the berries are bubbly.

Remove from the oven and sprinkle the dark chocolate over top immediately.

Allow the dark chocolate to melt into the berries for a few minutes then use a spatula to smooth it out over top.  Let it cool at least 15 minutes prior to serving.

Strawberry Galette with Dark Chocolate

Yield: 6 servings

Ingredients

  • 1 package (2 crusts) refrigerated pie
  • 3 cups of fresh strawberries, sliced
  • 1/4 cup sugar
  • juice of 1/2 lemon
  • 2 tablespoons cornstarch
  • 1 egg whisked with 1 teaspoon of water
  • 4 ounces dark chocolate, chopped

Instructions
