I learned early on in my relationship that my toughest critic when it comes to cooking would be my husband.  I *used* to ask him how he’d rate my meals.  For a stunning recipe that really challenged me, I might get a B+.  For a regular-rotation recipe, a C.  You know…. average.

According to my husband, A’s aren’t easily come by.  So, now I just pat myself on the back and don’t ask.  And, he… he knows just to always say my cooking is awesome and “Thank you.”  That’s twelve years of marriage for you.

What do I do, though, when I want to really wow him at dinner?  I make it spicy.  Subtlety of flavor is not something that he picks up on.  He wants to be punched in the palette with a strong dose of heat.  And thanks to RO*TEL, it’s pretty easy to do.   RO*TEL has enough zest to kick up every breakfast, lunch, dinner and, of course, snack!  And, I knew it would be a perfect way to banish the bland and bring the bold to one of his favorite recipes that I make… Tamale Pie.

Now, we’re calling it the ULTIMATE RO*TEL Tamale Pie.  Because, well, it is uh-mazing.  And, perfectly spicy.

Ultimate RO*TEL Tamale Pie

Turn every meal into a fiesta with RO*TEL! You're whole family will love this Ultimate RO*TEL Tamale Pie, layered with cornbread, sausage, RO*TEL and lots and lots of cheese. The perfect dish for your next summer party or potluck.

Preheat the oven to 400 degrees.  Grease a 2-quart baking dish.  Combine the cornbread mix, egg, Greek yogurt, corn, heavy cream, and diced jalapenos.

Turn every meal into a fiesta with RO*TEL! You're whole family will love this Ultimate RO*TEL Tamale Pie, layered with cornbread, sausage, RO*TEL and lots and lots of cheese. The perfect dish for your next summer party or potluck.

Blend until incorporated and bake for 20 minutes until cooked through and golden.  Remove from oven and set aside.

Meanwhile, heat a large skillet over medium high heat and coat with cooking spray.  Add the sausage and the onion, cooking until the meat is brown and the onion is soft.  Add the garlic, and cook for an additional 30 seconds.

Add the cumin and chili powder, salt to taste and stir.  Pour in the RO*TEL and cook an additional 5 minutes, until the mixture is bubbling and some of the liquid has evaporated.  Remove from heat.

Poke holes in the cornbread and pour 1/3 cup of the enchilada sauce over top.

Spread the sausage mixture on top of the sauce, then top with cheese.

Return the casserole dish to the oven and bake for another 20 minutes.  Remove from heat and top with cilantro and fresh jalapenos, and a little extra drizzle of enchilada sauce.

Ultimate RO*TEL Tamale Pie

Yield: 4 servings

Turn every meal into a fiesta with RO*TEL!  You're whole family will love this Ultimate RO*TEL Tamale Pie, layered with cornbread, sausage, RO*TEL and lots and lots of cheese.  The perfect dish for your next summer party or potluck.

Ingredients

  • 1 box cornbread mix
  • 1 egg
  • 1/2 cup plain Greek yogurt
  • 1/2 cup frozen corn, thawed
  • 3 tablespoons heavy cream
  • 2 tablespoons, diced pickled jalapenos
  • 1 lb. ground sausage (we like it hot!)
  • 2 cloves of garlic, minced
  • salt and pepper to taste
  • 1 teaspoon cumin
  • 2 teaspoons chili powder
  • 1 can of RO*TEL diced tomatoes
  • 10 ounce can of enchilada sauce (divided)
  • 1 cup of shredded cheese (or more if you like it CHEESY!)
  • one bunch of cilantro, cleaned and chopped
  • 1 jalapeno, thinly sliced

Instructions
