Germany just might be my favorite place on Earth.  The food!  The beer!  The chocolate.  I’m pretty sure that my trip abroad there as a high-schooler set the stage for my forever-love of food.  And my need to run. 😉

I’ve yet to travel to Germany during the holiday time for the Christmas market, but it’s definitely on my bucket list.  Like, Top 5.  It’s with that spirit… crisp fall days, rich German chocolate, and warm spicy aromas that I created these Pumpkin Spice Cookie Tarts.

If the fall season has you thinking all things pumpkin and sweet treats, you have to try these easy Pumpkin Spice Cookie Tarts. These little cookie tarts are the perfect dessert table and cool weather treat.

Featuring ingredients from Cost Plus World Market including Bahlsen Cookies, a classic German treat, and Pumpkin Spice Cookie Butter, these will the star of your dessert table.  But, they’re easy enough to whip up for any occasion.  Even if that occasion is curling up under a blanket with a mug of salted caramel coffee, a good book, and Pumpkin Spice Cookie Tarts.  Sounds like a plan to me!

Pumpkin Spice Cookie Tarts

If the fall season has you thinking all things pumpkin and sweet treats, you have to try these easy Pumpkin Spice Cookie Tarts. These little cookie tarts are the perfect dessert table and cool weather treat.

Y’all.  These are so easy!  Let’s get started.  Using Leibniz Butter Biscuits as your base, give each cookie an even spread of Pumpkin Spice Cookie Butter.

If the fall season has you thinking all things pumpkin and sweet treats, you have to try these easy Pumpkin Spice Cookie Tarts. These little cookie tarts are the perfect dessert table and cool weather treat.

Next, make the sweetened cream cheese spread.  In a medium size bowl, beat together the cream cheese, powdered sugar, vanilla and cinnamon.  Once well blended, scoop the mixture into a pastry bag and pipe on top.  If you don’t have the patience for this step, you’ll want to freeze the cookies after putting the cookie butter on top for about an hour.  This will ensure the cookie butter sets before using a knife to spread on the cream cheese.

Anywho…. either pipe on the cream cheese topping or spread it with a knife.  Now’s the fun part.  If you have any “less pretty” cookie tarts, top those guys with another cookie.  Then decorate the others with more Bahlsen mini cookies or chocolate curls.  I think the variety makes them that much more drool-worthy!

Pumpkin Spice Cookie Tarts

Yield: 1 dozen

If the fall season has you thinking all things pumpkin and sweet treats, you have to try these easy Pumpkin Spice Cookie Tarts. These little cookie tarts are the perfect dessert table and cool weather treat.

Ingredients

  • 1 package of Bahlsen Leibniz Butter Biscuits
  • Assorted packages of Bahlsen Leibniz Dark Chocolate Cookies and Minis
  • 1 cup Pumpkin Spice Cookie Butter
  • 8 ounces cream cheese, room temperature
  • 1/2 cup butter, room temperature
  • 1 1/2 pounds powdered sugar
  • 1 1/2 tsp. vanilla
  • 1/4 tsp. cinnamon
  • Milk as needed to thin the icing

Instructions

Using Leibniz Butter Biscuits as your base, give each cookie an even spread of Pumpkin Spice Cookie Butter.

Next, make the sweetened cream cheese spread.  In a medium size bowl, beat together the cream cheese, butter, powdered sugar, vanilla and cinnamon.  Once well blended, scoop the mixture into a pastry bag and pipe on top.  If you don't have the patience for this step, you'll want to freeze the cookies after putting the cookie butter on top for about an hour.  This will ensure the cookie butter sets before using a knife to spread on the cream cheese.
