If you’ve ever whipped up a batch of pancakes or french toast only to discover you’re out of maple syrup, you’ll understand the inspiration behind today’s Kitchen Stories pick and recipe for cinnamon french toast sticks.

In ‘Lady Pancake and Sir French Toast’, Josh Funk artfully describes the calamitous adventure embarked on by our favorite breakfast foods to be the first to reach the last drop of maple syrup.

Well, with our Cinnamon French Toast Sticks, no one need worry.  After a dip in vanilla-scented batter, fried up in butter, and coated in cinnamon sugar, they are perfect as-is!

‘Sir’ Cinnamon French Toast Sticks

Mix the sugar and cinnamon in a wide and shallow bowl and set aside.  In another large bowl, whisk together the eggs, milk, and vanilla until smooth.  Slice the bread into sticks, about four pieces per slice.

Place bread slices, batter and cinnamon sugar next to the stove top to create an assembly line.

Bring a large skillet or griddle to heat over medium-high.  Melt 2 Tb. of butter, then dip the bread sticks (enough to fill maximize skillet space but not to overcrowd) into the batter, allow to drip off excess liquid, then place in the skillet.  Cook on all sides until golden.

Immediately place golden french toast sticks into cinnamon sugar and toss to coat.  Remove to a serving dish.  Repeat the process with the remaining butter and bread.

If you have any extra (hah!), allow them to cool completely, then layer sticks in wax paper and place in freezer bag.  Freeze up to 1 month.  Reheat in the microwave for an easy week-day breakfast.

Yield: 6 servings

Ingredients

  • 12 thick slices of day old brioche (or other thick sliced bakery bread)
  • 5 large eggs
  • 1 cup milk
  • 1 tsp. vanilla extract
  • 8 Tb. butter, divided
  • 1 cup sugar
  • 4 tsp. cinnamon
