My husband has been on a non-dairy kick for awhile – especially at breakfast time.  I, however, have been a little more resistant to giving up my cheese and creamers.  That being said, it’s getting warmer out.  And swimsuit season is upon us.  And I’ve had a bum knee which has kept me from running.  And, and, and…

So, I’m working on making smarter choices with my everyday foods and looking for small victories towards a healthier lifestyle.  One way I’m doing it?  Smart swaps.  Like in this Strawberry & Chia Almond Milk Breakfast Parfait.

Strawberry & Chia Almond Milk Breakfast Parfait

Our Strawberry & Chia Almond Milk Breakfast Parfait makes choosing plant-based ingredients dream-worthy with creamy almond milk yogurt and fresh berries.

Combine Almond Milk and chia seeds in a mixing bowl.  Allow to rest ten minutes then give it a good stir.  Mix in the old-fashioned oats. Refrigerate for at least 1 hour prior to using.

Layer dishes with the Silk Vanilla Almond Dairy-Free Yogurt Alternative, top with half of the almond milk mixture, then the strawberries.  Drizzle with honey if desired and serve.

Strawberry & Chia AlmondMilk Breakfast Parfait

Yield: 2 servings

Our Strawberry & Chia AlmondMilk Breakfast Parfait makes choosing plant-based ingredients dream-worthy with creamy almond milk yogurt and fresh berries.

Ingredients

  • 1 1/2 cups Silk Vanilla AlmondMilk
  • 3 Tb. chia seeds
  • 1/4 cup old-fashioned oats
  • 2 5.3 oz containers Silk Vanilla Almond Dairy-Free Yogurt Alternative
  • 1 1/2 cups strawberries, chopped
  • Optional: honey or your preferred sweetener

Instructions

Combine Almond Milk and chia seeds in a mixing bowl.  Allow to rest ten minutes then give it a good stir.  Mix in the old-fashioned oats. Refrigerate for at least 1 hour prior to using.

Layer dishes with the Silk Vanilla Almond Dairy-Free Yogurt Alternative, top with half of the almond milk mixture, then the strawberries.  Drizzle with honey if desired and serve.
