In our house, one of our kid’s favorite food is pizza. The other loves tacos. And the third? Both, as long as there aren’t any veggies. Which is why I make these Gluten-Free Pizza Tacos all the time. They’re also perfect for when the kids have friends over… even those on gluten-free diets and with picky palettes. We can make satisfying, delicious meals and meet dietary needs without sacrificing flavor.
These Gluten Free Pizza Tacos are for everyone! You can customize each pizza taco for those that just won’t touch it if there’s something green in it. And you can even leave out the cheese for dairy-free folks. #blesstheirhearts
But, if you follow the recipe directions below, you can totally sneak veggies into the meat and sauce. My most discerning three-year-old has yet to notice them.
Because you never know who’s dropping into my house for dinner these days (we have an open door policy with neighbors and family – it’s the food blogger life), I love to keep Mission Gluten Free Soft Taco Tortillas in the pantry at all times. In fact, my family doesn’t notice any difference between these and other tortillas I’ve used in the past, they are soft and full of flavor.
These certified gluten-free tortillas are perfect for tacos, quesadillas, wraps, and yup… Pizza Tacos!
Gluten Free Pizza Tacos
Bring a nonstick skillet to medium high heat and coat with cooking spray. Add in the chopped mushrooms. The smaller you chop them, the less likely they are to be noticed by the kids.
Once browned, add in the ground meat. I used turkey this time, but it’s fabulous with Italian sausage, ground beef or ground pork. Continue cooking until the meat has cooked through and most of the liquid from the skillet has evaporated. Season with salt and pepper and stir in the marinara sauce until it’s coated but not soupy. No one loves a soupy taco (or pizza)!
On a baking sheet coated with cooking spray, lay out each tortilla. Sprinkle with a little bit of cheese, then top with the meat, more cheese, and if amenable to those eating, some green peppers. I’ve found that once you fold the tacos, no one notices the peppers either.
Place the baking sheet in the top third of the oven, under the broiler. Cook for 3-4 minutes, or until the cheese is melted and the tortillas begin to crisp up. You may want to monitor closely, depending on how hot your broiler gets.
Serve open face or folded up taco-style!

Ingredients
- Mission® Gluten Free Soft Taco Tortillas, 6 count
- 8 ounces mushrooms, chopped
- 1 lb. lean ground turkey (or ground beef, pork or Italian sausage)
- 1/2 cup (or a few tablespoons more) marinara sauce
- Salt and pepper to taste
- 1 small green bell pepper, finely chopped
- 2 cups shredded mozzarella
Instructions
