I’ve mentioned in a previous post that in this household we are trying to replace boxed and packaged items with the make-it-yourself version. And so, these balls are an effort to replace the balance bars and granola bars that our family holds dear.
I really like both of the recipes and would recommend you give them a go, if you find yourself running to the pantry for a quick energy boost in the afternoon for yourself or to quiet kids rumbling bellies before dinner.
Now, I’m not trying to fool myself or anyone else. I realize that the chocolate version is not the epitome of healthiness (is anything with powdered sugar?), but it’s gotta be better than some of the alternatives down the snack aisle! Give them a go and let me know what you think!
Peanut Butter Raisin Balls
Ingredients:
3/4 cup rolled oats
3/4 cup powdered milk
1/2 cup peanut (or any nut) butter
1/2 cup honey
1 tsp. vanilla
1/4 cup raisins
Mix the dry ingredients and raisins in a medium bowl. Mix in the remaining ingredients. Roll into one inch balls and refrigerate. Makes approx. 2 dozen.
Ingredients:
1/4 cup unsweetened cocoa
1 cup sugar
6 tb butter
1 tsp vanilla
1/2 cup milk
3 cups rolled oats (don’t use steel-cut. I’ve tried it and it’s a no-go)
powdered sugar (optional)
In heavy saucepan, bring butter, sugar, cocoa vanilla and milk to a boil over medium heat, stirring frequently. Remove from heat and stir in rolled oats. Drop onto wax paper in one-inch balls. Allow to cool some, then roll balls into powdered sugar, if using. Refrigerate. Makes approximately 3 dozen balls.
