“Best of the Best” Foodie Family Meal Plan

My house is a disaster zone.  We’re moving in two weeks and everything that is usually neatly tucked away has spilled out into our living area.  It’s a hot mess.  I can barely walk from one room to another, yet alone put together a glorious dinner.  Needless to say, I’m going back to basics for the next two weeks.  My recipes will be either based around using up pantry/refrigerator staples that I don’t want to move OR be delivered to my house via Papa John’s.

But my undoing doesn’t have to be yours.  For the next two weeks, I’ll be sharing with you some “Best of the Best” recipes in our Foodie Family Menu Series.  These are tried and true.  I hope you enjoy them!  Oh, and next week?  Our menu is coming straight from you!  Add your favorite recipe in our Linkup tool!  Can’t wait to see what you share!

Monday

Coconut Lime Chicken, recipe from Menu Musings (cook three extra chicken breasts for Thursday’s dinner)

Roasted Asparagus

Brown Rice (make double batch to reserve for Thursday’s dinner)

Tuesday, Vegetarian

Strawberry and Spring Onion Quesadillas, recipe from MomFavorites.com

Black Bean and Corn Salad: Toss one can drained and rinsed black beans with 1 1/2 cups thawed frozen corn.  Toss with olive oil, salt, pepper and splash of balsamic vinegar

Wednesday, Vegetarian

Broccoli Quinoa Bake, recipe from MomFavorites.com

Slow Roasted Tomatoes

Thursday (using leftover grilled chicken and rice from Monday)

Chicken Alfredo and Rice Casserole, recipe from BHG

Friday (Optional vegan/vegetarian)

Linguine and Broccoli with Spicy Peanut Sauce, recipe from Will Cook For Friends

Serve with Grilled Protein of choice: Chicken, steak, shrimp or tofu!

Weekend Entertaining

Baked Rigatoni with Spinach and Basil, recipe from Mom Favorites, shared on Chiquita Moms

Roasted Carrots
