Get ready for some roars with Simba’s Cheesy Lion Toasts. It’s perfect for a snack after watching Disney Junior’s The Lion Guard, with episode premiers on Fridays throughout the summer. This is part of the popular Forks and Folly Kitchen Stories Series.
Let’s be honest, summer is a healthy dose of outside play, constructive indoor activities, and some quiet time. Friday mornings are chill-out couch time in this house. It’s when I wrap up my work week, prepare for the weekend, and if at all possible grab a little me-time for myself.
When I let the kids pick their own shows, often I put in my ear buds and jam to tunes that I once thought made me cool, but now realize they just make me old. #realitycheck
But, when the kids tune in to the Lion Guard on Disney Junior, I’m all ears. I loved The Lion King as a child, and get a little thrill in sharing Simba and his crew with my boys.
In the Lion Guard series, Simba’s son, fun-loving Kion, is happy that his sister is destined to rule the Pride Lands. He soon discovers that as the second-born, he has his own destiny: to lead the Lion Guard, a team that protects the Pride Lands and defends the Circle of Life.

To celebrate a morning of successful getting-alongness (which is virtually impossible with three young boys in the house), I decided to treat them to a themed meal. In honor of my favorite Lion Guard character, Simba, we’re making Simba’s Cheesy Lion Toasts. Center plate – cheesy pizza toasts. For the mane – Sausage and tomato rotini. My kids favorite dishes combined in one plate of Lion Guard goodness.
Simba’s Cheesy Lion Toasts
Preheat the oven to a low broil setting. Trim the edges of sandwich bread to form a circle; use a lid as a guide, if you need one.
Place the bread on a greased cookie sheet and spread a layer of tomato paste on top. Sprinkle with pizza cheese. Cut a nose from a slice of pepperoni and use olive slices for the eyes. Place under the broiler and cook until the cheese has melted and the bread has toasted.
Remove from the oven and plate. Use scallions slices to form the whiskers.
To give the lion his full main, I used a pre-packaged rotini with sausage dinner and simply heated it up. But, feel free to make your own version if you have the time. If you like, simply sub rotini for the penne in this recipe.
Pour the cooked pasta around the plated cheesy toast and, get ready for some roars!

- 4 slices of sandwich bread
- 4 tablespoons of tomato paste
- 1 cup of pizza cheese
- 4 slices of pepperoni
- 8 slices of black olives
- 2 scallions, cut into long slivers
- 4 cups of sausage and penne pasta
