Happiness is Veggie Hummus Pitas

In my home, happy evenings are ones in which I put together a healthy and simple dinner.  Everyone gets the same thing and everyone enjoys it.  Quietness ensues while kids and adults eat their dinners and talk about their day (or say “Gah, gah, gah” as the littlest one in the house does).  We eat our dinners without any pleading for anyone to take more bites.  In fact some of us may have seconds.  But, no guilt.  Because it’s healthy.

In order to set myself up for evening success, I try to find great recipes.  Here’s one I’ve tweaked and have made often:
Veggie Hummus Pitas:

Ingredients:

Whole wheat pitas
Hummus (I love the Trader Joe’s Horseradish Hummus)
Veggies (once again, I picked a pre-chopped Trader Joe’s blend)
Shredded cheese (about a cup)
BBQ sauce for dipping

Directions:

Preheat oven to 375 degrees. Heat cooking spray over medium-high heat in skillet and saute veggies until tender.

Spread hummus inside of each halved pita.  Since we used large pitas, I used two for our family of four.  Layer veggie and shredded cheese inside of pita and place on greased baking sheet.

Bake 8-10 minutes or until cheese is melted through.  
I served mine with Roasted Sweet Potatoes.

 – Preheat oven to 450 degrees.  Dice sweet potatoes and toss with olive oil, salt, pepper, and chopped fresh rosemary.  Roast 25-30 minutes or until tender and browned on the outside.  Only stir once or twice while cooking. 
Everyone enjoy’s their dinner!
