Menus on Mondays: 9/17/12

Next week is my big Caribbean vacay, and my in-laws graciously volunteered to come down for a week to watch the children while we are away.  Knowing that I’m in a cast and one hand down, they also generously offered to come down an extra week early to help out.  Um, Thanks!!!

In an effort to show gratitude and hospitality (and because I know that I’ll have an extra set of hands to help me out in the kitchen), I’m putting together a menu of some of my favorite family dinners.  Tell your families to come to dinner hungry… it’s gonna be a week of Good Eating!
Monday
Grilled Chicken – marinate chicken breasts in Allegro marinade and grill!
     * Grill one extra pound for Friday’s dinner, if you plan to make it.
Creamed Corn with Spinach and Parmesan


Tuesday – Vegetarian, Optional Vegan
Zucchini and Corn Taco Seasoned Quinoa Salad, *eliminate cheese for vegan diets
Guacamole and Chips

Wednesday
Spicy Soy Meatballs
Sriacha Rice* – mix steamed rice with sriacha hot sauce (or ginger paste if you don’t want it too spicy)
    *Make 2 1/2 cups extra rice if you plan to make Friday’s meal
Asian Edamame Cole Slaw


Thursday, Vegan
Tamale Shepherd’s Pie

Saturday, Optional Vegetarian
Caramelized Pear and Gorgonzola Quiche, *eliminate pancetta for vegetarian version
      – I plan to use a ready-made crust for this quiche, although I don’t doubt that the homemade one is better!
