Menus on Mondays: Weekly Menu Plan for 12/10/12

It’s gonna be hard to come up with a menu plan as great as last week’s!  The Tex-Mex Black Eyed Pea Casserole, Dirty Rice, and Spinach and Spaghetti Squash are all new family favorites in our house.  Who knew that eating such a healthy diet could be so darn tasty?  I’m going to try and keep the theme of healthy home-cooking rolling along this week.  I hope that you’ll find some new favorites along with us!

If you’ve made something from a Menus on Mondays and loved (or hated) it, let us know!  Feedback of all kinds is appreciated!

Monday – Slowcooker!

Crock Pot Chicken Taco Chili
Garden Monkey Bread (omit bacon to trim calories)

Tuesday

Hoisin Glazed Salmon with Garlicky Snow Peas
Soba Noodles with Sweet Ginger Scallion Sauce 

Wednesday – Optional Vegan

Zucchini, Black Bean and Corn Quinoa Taco Salad (omit cheese for vegan diets)
Chips and Guacamole

Thursday – Optional Vegetarian

Brussels Sprouts Hash (omit pancetta/bacon for vegetarian-diets and use a tablespoon of olive oil in lieu of bacon grease)
Roasted Carrots (Quarter carrots, toss with olive oil, salt, pepper and spice of choice.  Cook at 450 degrees for 25 mintues, flipping once.

Friday – Vegetarian

Spinach Calzones with Blue Cheese
Slow Roasted Tomatoes

Weekend Cooking

Appetizer:
Fried Herbed Almonds
Dinner:
Pasta Carbonara
Green Bean Salad
Store Bought Rosemary Foccacia Bread
Dessert:
White Chocolate Cranberry Blondies
