I know, it’s a pain. Digging out the pumpkin guts. Separating all of the stringy goo from the seeds. For what? A bunch of bland seeds that get stuck in your teeth? Yeah, been there done that.
But, that was before. Before I discovered the ultimate combination of ingredients to make roasted pumpkin seeds awesome. It’s so stupid-simple (once you get the durn things out of the pumpkin – still don’t have a hack for that). Just be forewarned. They are addictive.
Tonight, we plan on doing our annual pumpkin carving. This year, I’m not gonna let my husband pretend to stab our kids with a knife. (See here.) Gotta have standards. We will have chili. There will be cider for the kids and pumpkin beer for the adults. There will be roasted pumpkin seeds. There will probably be a gigantic mess, happy kids and smiling parents. And all will be well. Best Ever Roasted Pumpkin Seeds Ingredients: Cleaned pumpkin seeds Sesame Oil Dried Ground Ginger Garlic Powder Salt and Pepper Pat seeds dry with paper towel. In a large bowl toss sesame seeds with sesame oil, ground ginger, garlic powder, pepper, and a generous helping of salt. Roast at 350 degrees until golden.
