How are you doing with keeping New Year’s resolutions? Last week, I shared with you some foods that I’m keeping in my pantry to help stay on the path to a healthier, stronger and fitter me. I’m still going at it – I mean, we’re only two weeks into January, can’t give up yet!
I’ve been going to the personal trainer twice a week. It’s a humbling experience. I’ve busted on my butt in front of a group of young dudes. I’ve nearly passed out. I’ve needed help standing up after my legs turned to jello. But, I’m still going. Although, if I didn’t have someone standing over me, pushing me to work harder, it would be even harder to work through the pain!
On my non-personal trainer days, I’ve been working out on my in-home elliptical machine. It’s tedious, but it gets my heart rate up. I am chomping at the bit to get back to running. I’m hoping that my elliptical workouts are getting me ready for my first mile after baby.
Can’t wait for that treadmill to get here. Maybe this week? Fingers crossed.
My eating, though, has been all over the place. I’ve been doing a lot of food blogging lately, which doesn’t help. And, I’ve been working on some Valentine’s Day photo-shoots for clients that are laden with chocolate, booze, and all things heavy cream. Not so good for those resolutions.
In an effort to counteract the mindless eating associated with my decadent “work” (yeah, I call eating chocolate and drinking champagne work!!!), I’ve been relying on an old friend of mine. Yep, I’m talking about LEAN CUISINE®.
These have been my buddies since my college days, for when I’m trying to cut back or simply don’t feel like putting together a full dinner. They’re also really good for those days when I’m working through lunch or my husband works late in the evening and I have to fend for dinner myself.
Yesterday was one of those days. I had a few minutes in the morning to put together a breakfast, but lunch was on the go and dinner was in front of my computer. LEAN CUISINE® to the rescue.
Breakfast, lunch, and dinner were all three saved by some great LEAN CUISINE® products that I scored on my last trip to Walmart. And, I know I didn’t blow my resolutions despite my busy day.
Breakfast was a LEAN CUISINE® Morning Collection™ Turkey Sausage Scramble. Complete with turkey sausage with egg whites, roasted red potatoes, reduced-fat cheddar cheese, red peppers & onion, this is a breakfast-win. Plus, I added my favorite Tex Mex Breakfast Toast.
Start with mashing half of an avocado with diced red onion, chopped cilantro, a drizzle of olive oil, and salt and pepper to taste. Slather a good amount on top of a piece of toasted whole wheat bread. Next, cover with a few tablespoons of your favorite salsa. Then, if you like things hot, add a few dashes of hot sauce. Oh, yeah. That’ll get you started in the morning!
For lunch, I had LEAN CUISINE® Culinary Collection Pepperoni Pizza. My three-year-old wouldn’t let me eat my pizza in peace, so I had to share a slice with him. You win some, you lose some. 😉
I still hadn’t wrapped up work by dinner time, so my husband fed the kids and I grabbed my third Lean Cuisine for the day, this time in the privacy of my office. (I didn’t want to share!)
This one was my favorite: LEAN CUISINE® Culinary Collection Sesame Chicken: sesame crunchy chicken on a bed of noodles with veggies. Yum. I rounded it out with some steamed broccoli.
