Simple ingredients and easy prep makes this California Power Salad Recipe the perfect menu item for your summer beach week vacation!
The last thing I want to do at the beach is spend time in the kitchen. Sure, at home I love it. But, when I’m at the beach? Give me some sunscreen and a margarita, and these toes are staying in the sand.
Unfortunately, everyone else I travel with feels the same way, and someone has to prep meals for the crew. That someone usually ends up being me.
Because of that, I have a few go-to meals and shortcut recipes that I rely to ensure we all eat well without a lot of effort.
I recently discovered the new Birds Eye Protein Sides on a shopping trip to Walmart. I LOVE Birds Eye frozen veggies and use them regularly in my cooking at home. These new protein sides which offer interesting whole grains and veggies in several seasoned varieties looked awesome. I picked up a few bags.
I also grabbed a bag of Tyson Grilled and Ready chicken. I wasn’t sure if our beach house was going to have a grill, plus, I didn’t envision myself slaving over a grill in the heat if there was one.
Together, I figured these two products would make one great (and EASY) protein packed meal. Without putting too much damage to those beach bodies we’re rocking. (Insert hint o’ sarcasm.)
It took all of five minutes to come up with this meal to feed our crew. And, I got rave reviews.
I call it the California Power Salad. And it’s yours for the making with just a wee bit of time and some easy convenience foods from Walmart!
One: California Style Birds Eye Stemfresh Protein Blends
Two: Tyson Grilled and Ready Chicken Breast Fillets
Three: Avocado and Pomegranate Seeds
Four: Dressing (drizzle o’ olive oil and balsamic vinegar)
Prep and toss together.
Voila. Dinner is served.
