With the New Year upon us, I’ve only had a few days to stick to my resolutions, but so far so good. One of the ones that I’m most excited about is planning out my meals and sticking to it through the week. Towards the end of 2015, the Chinese delivery guy was getting to know us a little too well.
Over the years, I’ve had to adapt my meal planning for the week. Pre-kids it was all about learning how to cook and maximizing time after work. When I was a stay-at-home mom, I made sure to save enough time to whip up culinary masterpieces every night. And now, as a working mom with three children? Easy, simple dishes that can be made in advance or in small increments throughout the day are the only things that hit the table come dinner time, and this Creamy Turkey and Noodle dish fits the bill.
Made with pantry stapes and few favorite ingredients this is a recipe that tastes of classic comfort food without the effort! My whole family enjoyed it. Even little James. 🙂
As hard as it is for me to stick to a recipe, I pretty much stayed true to the original. With the exception of adding a little bacon, because everything is better with bacon. If you don’t agree, well, let’s just keep that to ourselves…
To make this beauty, simply cook a pound of farfalle according to package directions.
Meanwhile, brown up your bacon, and add the onion, then the frozen veggies and make the sauce. Toss all the ingredients together, then…
Pour it into a casserole dish, top with cheese and bake. Dinner. Done.
