It’s not often that I feel like I’ve made something that is too pretty to eat.  But y’all.  Finally.  I’ve done did it with these Berry & Cream Cheese Danish Pastries!

And the kids had no problem digging in.  🙂

As my quest continues to make 52 desserts in as many weeks, I’ve been scouring cookbooks, pinterest, blogs, and menus to collect inspiration for my next sweet treat.  It was at Starbucks where the idea for this one hit me.  I was ordering my chai latte and almost… almost… ordered a danish pastry to go-with.  I’m not a dessert gal so it made me double guess myself.

What was it about that pastry?  It was then that I realized….. cream cheese.  Cheese.  Yup, it pretty much always comes back to cheese with me.

Serve these Berry & Cream Cheese Danish Pastries for breakfast, snack or dessert! With seasonal fruit, sweetened lemon cream cheese and golden puff pastry, these will become one of your go-to spring recipes!

One of the things that I love most about these Berry & Cream Cheese Danish Pastries (besides how easy they are to make), is that they are versatile.  I can make them for breakfast for a sweet treat for my boys before school.  They are a delicious afternoon snack to serve with that must-have coffee to power through the day.  And, the kids will eat whatever veggie is on their dinner plate to be rewarded with one for dessert.

Oh, and you can use whatever fruit or berry you have on hand.  Apples, pears, mangos, berries… it can all be done.

Berry & Cream Cheese Danish Pastries

Serve these Berry & Cream Cheese Danish Pastries for breakfast, snack or dessert! With seasonal fruit, sweetened lemon cream cheese and golden puff pastry, these will become one of your go-to spring recipes!

Start out by taking two sheets of thawed puff pastry and sealing the edges together to make one sheet.  Using a 3 1/2″ cookie cutter, make 18 circle shapes and place them on prepared baking sheets.

Serve these Berry & Cream Cheese Danish Pastries for breakfast, snack or dessert! With seasonal fruit, sweetened lemon cream cheese and golden puff pastry, these will become one of your go-to spring recipes!

Score the pastry rounds with a knife, 1/4 inch in from the edge, then prick the inside of the circles with a fork.

Serve these Berry & Cream Cheese Danish Pastries for breakfast, snack or dessert! With seasonal fruit, sweetened lemon cream cheese and golden puff pastry, these will become one of your go-to spring recipes!

Using a mixer, beat together 1 package of low-fat cream cheese, the zest and juice of one lemon, sugar and vanilla until smooth.  Spread approximately 1 1/2 tablespoons of the cream cheese mixture on top of each round, within the scored border.

Serve these Berry & Cream Cheese Danish Pastries for breakfast, snack or dessert! With seasonal fruit, sweetened lemon cream cheese and golden puff pastry, these will become one of your go-to spring recipes!

Then top each round with berries or fruit of your choice.  Whisk one egg with one tablespoon of water and brush the edges of each pastry with the egg wash using a pastry brush.

Bake for 12 – 14 minutes, or until golden.  Allow to cool completely before storing.  If eating right away, let cool slightly as the fruit will be hot!

Berry & Cream Cheese Danish Pastries

Yield: 18 pastries

Serve these Berry & Cream Cheese Danish Pastries for breakfast, snack or dessert!  With seasonal fruit, sweetened lemon cream cheese and golden puff pastry, these will become one of your go-to spring recipes! 

Ingredients

  • 8 ounces low-fat cream cheese, room temperature
  • 1/4 cup sugar
  • Zest and juice of one lemon
  • 1 package (17.3 ounces) frozen puff pastry, thawed
  • Seasonal fruit, approximately 1 1/2 cups
  • 1 egg
  • 1 tablespoon of water

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
