When you’re a food blogger, you find that you have got to have some will power.  It’s really hard to cook your way through the day, photographing and smelling amazing foods, without eating.

I generally do a good job of portioning out food for meals for my family and/or delivering food to my neighbors.  But sometimes, sometimes…. I just gotta take a spoon to it.  Such was the case with this recipe for Caramelized Onion and Bacon Jam.  Holy heck.

This is a moment when I really wish there was smell-o-vision.  Or maybe not.  Because then I’d have to share.  Maybe you should just make your own?

If you ask me, there are very few things in this world that are better than crispy bacon and caramelized onions.  Combine that with the salty and buttery flavor of a RITZ Cracker?  Grab RITZ Crackers in the Original package, the Original Fresh Stacks or the Spring Edition at your local Kroger or Kroger Banner store.

And let’s not forget the goat cheese!  I found some with guava jelly during my Kroger shopping trip and it’s divine.  Let’s dig in!

Caramelized Onion and Bacon Jam

Sweet and salty. Creamy and smooth. RITZ Crackers with Caramelized Onion and Bacon Jam, served with Guava Goat Cheese will be your new favorite appetizer. Perfect for entertaining or as a family snack!

Chop the bacon into thin slices and fry in a large skillet until golden and crisp.  Remove all but two tablespoons of the bacon grease and save for another use.  To the grease, add in  sliced onions.  Cook over medium heat for ten minutes or until golden.  Add in the brown sugar, apple cider vinegar, fresh thyme, salt, crushed red pepper flakes and stir.  Keep your nose back as the vinegar hitting the pan can be pungent.

Stir in the bacon and water.  Cook for another 15-20 minutes until thick and sticky, like a jam consistency.

Serve with a sprig of thyme, goat cheese at room temperature (mine was flavored with guava!) and of course RITZ Crackers for the perfect combination.

How tasty is that??  All of the ingredients can be found at Kroger, Dillions, or Fry’s!

Caramelized Onion and Bacon Jam

Yield:

Sweet and salty.  Creamy and smooth.  RITZ Crackers with Caramelized Onion and Bacon Jam, served with Guava Goat Cheese will be your new favorite appetizer.  Perfect for entertaining or as a family snack!

Ingredients

  • 1 lb. bacon, chopped + 2 tablespoons bacon grease
  • 2 cups sliced onions (from approx. 3 medium onions)
  • 3 tablespoons brown sugar
  • 1/4 cup apple cider vinegar
  • 1 tablespoon chopped thyme leaves
  • pinch of salt and red pepper flakes
  • 1/4 cup water
  • For serving:
  • RITZ Original Fresh Stacks 11.8 oz
  • 4 ounces goat cheese, room temperature

Instructions
