Easy Moules Frites: Four-Ingredient Supper

Easy Moules Frites is one of my favorite healthy, not-healthy meals.  I feel like I’m doing my body good when ordering mussels… I mean it’s seafood, so it’s gotta be good for you.  But then you have to pair it with french fries, because what isn’t better with a side of fries?

The Moules Frites combo is perfection.  Those Belgians sure know what they’re doing.

For those of you that haven’t cooked mussels at home and are intimidated by it… start out with this recipe.  By using frozen mussels available at your local grocery, you get to skip all of the worrying about keeping them alive until ready to use.  Oh,  the cleaning part is already taken care of.  #winning

Once you get comfortable cooking this mussel recipe, start playing around with the sauce… maybe add a little bit of curry and coconut milk, or add some fresh tomatoes and basil once they’re in season!

Easy Moules Frites

Preheat your oven and cook the french fries according to package directions.

Heat a large non-stick skillet over medium high heat.  Add the olive oil.  Toss in the chopped shallot and cook until softened, about 4-5 minutes, stirring frequently.  Empty the contents of the mussels pouch and cook over medium-high heat until all shells open, approximately 5 minutes.

Remove from heat and pour into a large bowl.  Toss with parsley and serve with piping hot fries for dipping into the garlic parsley sauce!

Easy Moules Frites

Yield: 2 entree portions

Ingredients

  • 2 lb. of  Mussels in Butter Garlic Sauce (I used the Pier 33 Gourmet Mussels brand)
  • 1 tablespoon olive oil
  • 1 shallot, minced
  • 1 bunch of parsley, minced
  • 1 package of frozen french fries

Instructions

  1. Preheat your oven and cook the french fries according to package directions.
