Hello, Week 15 of #52WeeksofSweets. This recipe for Kahlua S’mores Mousse Cups just might be my favorite so far. Crumbled Grahams, coffee-chocolate mousse, and a torched marshmallow…. Skip dinner tonight and head right to dessert! We won’t tell.
Can we just start with the obvious reason why should should make this Kahlua S’mores Mousse Cups? Um… ok, there are several obvious reasons.
First – Kahlúa. I love it as an after-dinner drink. I love it even more in this recipe. Combined with coffee, chocolate, and tangy cream cheese and Greek yogurt, it’s perfection.
Second – You get to use a blow torch. A blow torch!! I bought mine specifically for this recipe, but now I can’t wait to torch some more foods in my kitchen. I should probably also purchase a fire extinguisher. ? ? ?
Third – S’mores. It’s a classic flavor combo for a reason. It’s uh-mazing. And with the few extra “adult” additions, it’s just damn good.
Kahlua S’mores Mousse Cups
Place grahams in a ziploc bag and beat with a rolling pan. We get to take a lot of aggression out with this recipe – hitting and fire, and all. 🙂
Divide the crumbs between four glass serving dishes.
In a medium bowl, add the Greek yogurt, Neufchatel cheese, sugar substitute, cocoa powder, vanilla extract, coffee, and Kahlúa. Beat with a hand mixer until smooth. Gently fold in the whipped cream topping.
Divide the mousse among the four cups.
Place the marshmallows on a baking pan. Lightly torch each marshmallow. Just be careful, y’all.
Divide the extra Graham cracker and Hershey bar into 1/4’s. Top the mousse with one cracker, one piece of chocolate and a marshmallow.

- 1/2 cup plain Greek yogurt
- 4 ounces Neufchatel cheese (reduced fat cream cheese), room temperature
- 3 Tb. sugar substitute (like Stevia baking blend)
- 3 Tb. unsweetened cocoa powder
- 1 TB vanilla extract
- 1/4 cup strong coffee, cooled to room temperature
- 4 Tb. Kahlúa liquor
- 1 cup whipped cream topping
- 1 full sleeve of Graham crackers + one extra sheet for garnish
- 4 regular-sized marshmallows
- 1 standard-sized Hershey's bar
Instructions
