The hubs and I always keep them in our freezer for impromptu dinners on the grill and to bring out whenever we fire up the grill for friends coming over to watch football. But topped with charred pineapple and jalapeno, tangy caramelized onions, and barbecue sauce? Well, I may have to start buying them by the palette to make these Sweet & Spicy Hawaiian Burgers for every occasion.
Sweet & Spicy Hawaiian Burgers
I start out by making the tangy caramelized onions. They take a wee bit of time, but not much effort. Bonus, that you can make them a few days in advance, refrigerate them, then just bring them to room temperature prior to serving.
Slice four large red onions into thin slices. Yep, it looks like a lot, but it cooks down. I promise! Over low heat, melt two tablespoons of butter with two tablespoons of olive oil. Toss in the onions, then cover.
Stir occasionally, and remove the lid after about 30 minutes of cooking. Continue to cook over low heat for an additional 15-20 minutes or until most of the liquid has evaporated. Pour in the balsamic vinegar, salt, and red pepper flakes. Remove from heat and allow to cool.
When you’re ready to get the party started, preheat your grill and slice the pineapple into rounds. Add the burgers to the grill along with the pineapple and whole jalapenos. Cook the burgers according to package directions and the pineapple and jalapenos until you have nice char marks.
Allow the jalapenos to cool slightly before thinly slicing. Remove the seeds for less heat, if desired.
Now you’re ready to party! Assemble your burgers – layering the black bean patties, grilled pineapple, caramelized onions, jalapenos, and barbecue sauce! I dare you to eat just one!
