In my humble opinion, most dishes are better with a sunny-side up egg. Am I right? Well, if you disagree, don’t fret. Our recipe of the day, the Ultimate Croque Madame, is equally delicious sans egg. We’ll just have to call it a Croque Monsieur instead. Either way, it’s amazing. In fact, you’ll likely never make plain ol’ grilled cheese again!
I stumbled upon a recipe for this dish years ago. In my family, when celebrating a birthday, you get to pick what’s for dinner. When it’s my husband’s turn, we always, ALWAYS, have grilled cheese. So to spruce things up, I took it up a notch. The first year we made Croque Monsieur – grilled cheese and ham without the egg. The next year, Croque Madame.
We’ve gotten fancier each year, resulting in the Ultimate Croque Madame – complete with a rich and decadent bechamel sauce. Don’t be intimidated; although the name is fancy, it’s simple to execute.
The Ultimate Croque Madame Ingredients
This delicious recipe actually uses just a few really excellent ingredients, like quality prosciutto, artisanal bread, and Organic Valley dairy products. The Ultimate Croque Madame
First let’s prepare the sauce. Melt butter in a medium saucepan over medium heat. Whisk in the flour and cook, stirring constantly until thoroughly incorporated. Add the milk, slowly, while whisking constantly, until the mixture is smooth.
Cook, stirring often until the sauce is thickened, about 5 minutes. Remove from heat and season with salt and pepper, dijon, and nutmeg.
When you’re ready to assemble the sandwiches, preheat the oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper and lay down the bread slices.
Spoon sauce up to the edges over each piece of bread. Top half the bread slices with prosciutto and half of the cheeses. Top with remaining bread slices, then top those slices with remaining cheese.
Place the baking sheet in the oven and bake for 5-6 minutes, until the cheese is melted and bubbly. Turn on the broiler and cook for an additional 3 minutes or so, until the sandwich tops are golden.
Meanwhile, pan fry an egg for each sandwich. Make sure the whites are cooked through and the yolk is runny. Season with salt and pepper.

Ingredients
- Bechamel Sauce
- 1/4 cup Organic Valley Cultured Butter
- 1/4 cup all-purpose flour
- 1 1/2 cups Organic Valley Whole Milk
- salt and pepper to taste
- 1/2 teaspoon dijon mustard
- pinch of freshly ground nutmeg
- Sandwich
- 10 pieces of artisanal sandwich bread
- 8 ounces thinly sliced prosciutto
- 8 ounces Organic Valley Shredded Mozzarella (or mix it up with Mexican cheese if you like!)
- 8 ounces Organic Valley Sharp Cheddar, hand-grated
- 5 eggs
Instructions
