Hence my inspiration for this Berry and Bacon Superfood Salad. All of the good-for-me stuff, and a little bit of the “bad.” With just a sprinkling of bacon and feta, this superfood salad becomes a meal that’s crave-worthy.

Bacon and Berries Superfood Salad
Add the bacon to a hot skillet and cook until crispy. I like mine “extra crispy,” but to each their own. Drain the bacon on paper towels. Reserve the bacon fat for another use.
Next slice up all of the ingredients. I like a “chopped” style salad, with a mix of romaine for crunch and healthy greens including spinach and arugula. I also prepped English cucumber, blueberries, raspberries, lemon wedges and some crumbled feta.
When I have a salad-entree, I like to really make it feel like a meal, so I load up on the greens. Then it gets topped with all of my veggies, fruits, bacon and cheese.
Because there is so much great flavor in all of the fresh ingredients used in this salad, I forgo the dressing. Instead, a little drizzle of balsamic vinegar and olive oil does the trick! And, since you’re eating SALAD, why not enjoy it with a nice glass of vino?

- 1 5 oz. package organicgirl Romaine Salad
- 1 5 oz. package organicgirl Baby Spinach & Arugula Salad
- 8 oz package of Applegate Bacon
- 1 English Cucumber, diced
- 1 pint blueberries
- 1 pint raspberries
- 1/2 cup crumbled feta
- Lemon wedges
- Drizzle of balsamic vinegar and Bertolli Organic Pure Olive Oil
