I very rarely walk into a grocery store to shop. It’s all online, if possible. Mostly because it saves me time. But also because I have this tendency to throw random ingredients into my cart. It happened the other day when I was at Walmart. Meyer lemons? Why yes, I could make an amazing cocktail with those. Brown rice pasta? Might be fun for an Asian stirfry. Pichuberry puree? Never heard of it. Let’s give it a go!
So yes, you can see why I order groceries online. But, it’s sooooo much fun to try new things. Dontcha think? I’ve yet to whip up a Meyer Lemon cocktail, but I did get my pichuberry on this weekend, and so should you.
What is a pichuberry, you ask? It’s a native fruit of Peru and by eating only 3 ounces of this fruit, you’ll meet 37 percent of your daily required vitamin A, 13 percent of your required niacin, 18 percent of your recommended vitamin C, and 39 percent of your vitamin D requirement. (Percent daily values are based on a 2,000-calorie diet.) It’s a natural antioxidant and is super versatile. Use them just like any other berry.
I think these would be awesome in a smoothie, but I wanted to do something a little out of the box…. like a pichuberry cake! I had some ground almond flour (that I no doubt picked up on another random shopping trip) and realized that the two would be an amazing combo in a light dessert.
You’d never guess that this amazingly moist and rich tasting cake is both butter and gluten-free! And, oh-so-easy to make! Dust with a bit of powdered sugar after pulling from the oven for a guilt-free dessert.
Pichuberry Cake with Almonds
Defrost pichuberry puree along with 2 Tb. sugar. Once thawed, stir to combine. Combine pichuberry puree along with all remaining ingredients (except sliced almonds) in a food processor. Blitz until smooth.
Pour batter into a greased 9″ spring form pan. Sprinkle with almonds. Bake until golden on top and a toothpick inserted in the center comes out clean. Cool on a rack for 15 minutes before removing from the pan.
Dust with powdered sugar before serving.

Ingredients
- 14 oz. Pichuberry Puree, thawed
- 2 cups + 2 Tb. sugar, divided
- 8 eggs
- 16 oz. ground almond flour
- 1 Tb. lemon juice
- 1/4 cup almond slices
- Powdered sugar for dusting
Instructions
Preheat oven to 350 degrees. Defrost pichuberry puree along with 2 Tb. sugar. Once thawed, stir to combine.
Combine pichuberry puree along with all remaining ingredients (except sliced almonds) in a food processor. Blitz until smooth.

I found Pichuberry Puree in the frozen berry section of my Walmart. Check to see if Pichuberry Puree is available at your local Walmart store or at Walmart Grocery!
