Tar Heel Pie Recipe for the Win

It’s game time folks!  Celebrate the March Basketball games with Brownie Pie (a.k.a. Tar Heel Pie).  It’s so delish, even folks from Durham will dig this recipe.

Now that we’re getting into March and spring is in the air, it’s time to get pumped… pumped for some college basketball.  Not your thing?  Hmmm…. you clearly didn’t go to school in North Carolina then.

I, however, bleed Carolina blue and can’t wait to see my team rock it this year.  I cannot put together a bracket without having my team as the winner.  ‘Tis true.  Fortunately, that often works out in my favor.

Obviously, the Big Guy is on my side.  Why else would he make the sky Carolina blue?

So yeah.  I’ll be up late to watch some b-ball.  And, while I’m cheering on my team, I’ll be enjoying one of my fave desserts.

Some call it Brownie Pie, others call it Tar Heel Pie, and you may also hear it called just plain awesome.

I start out with a store-bought crust.  I accept my limitations and know that whatever comes out of a box will be better than whatI can make from scratch.

Once you’ve laid out your pie crust in the plate, simply sprinkle pecans and then the chocolate brownie batter (if you can keep from eating it with a spoon first)!

Bake for 40 minutes and voila.  As simple as that.  I let it cool down a touch, then serve it warm with Salted Caramel Pretzel ice cream and a drizzle of caramel.

Tar Heel Pie Recipe (a.k.a Brownie Pie)

Ingredients

  • 1 prepared pie crust
  • 1 cup of milk chocolate chips, divided
  • 5 tablespoons of butter, cut into pieces
  • 3 tablespoons of vegetable oil
  • 2 tablespoons of Dutch process cocoa powder
  • 1/2 cup brown sugar, packed
  • 1/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 6 tablespoons all-purpose flour
  • 1 cup pecans, chopped

Instructions

  1. Preheat oven to 350 degrees.
  2. In a microwave safe bowl, add 3/4 cups of the chocolate chips and butter and microwave in 30 second intervals, stirring after each session until smooth. Stir in oil and cocoa powder.
  3. In a separate bowl, mix both sugars, eggs, vanilla and salt. Stir in chocolate mixture until combined. Then stir in flour and remaining chocolate chips.
  4. Place pie crust in a greased pie plate. Sprinkle chopped pecans on the crust, then pour batter on top.
  5. Bake approximately 35-40 minutes, until set and only a bit of batter sticks to the toothpick when inserted in the middle. Allow to cool then serve with ice cream and caramel sauce.
