Easy Banh Mi Style Pork Tacos with Pickled Veggies

I always wondered what the story behind a Banh Mi was.  You too?  Let’s be friends.  The idea of layering traditional Asian flavors with mayo in sandwich form seems a little bizarre, right? Turns out it’s a product of the French colonial period in Vietnam.  #knowledgedrop

Regardless of how it came to be, the combo of sliced meat, pickled veggies, chilis, and mayo smooshed together in a crusty baguette is really fantastic.  Nothing beats the real deal.  But you know what comes close?  This taco version boasting ground pork in a mayo and sweet chili sauce with pickled veggies.

For this recipe I selected celery root, carrots and cucumber and tossed them with rice vinegar and a touch of spice.  For an extra kick, I sprinkled on jalapeños that I marinated in vinegar and honey.

But the thing that really makes it?  Hand made style tortillas from La Tortilla Factory.  Ever had them?  The brand and style of tortillas DOES make a difference.

Swapping out baguette for the tortillas not only makes it easy to make any night of the week (I always have tortillas in the pantry), but it also makes the flavors of the fillings stand out.  Forget Taco Tuesdays.  Let’s have taco night every day of the week!

Banh Mi Style Pork Tacos

The traditional Vietnamese Banh Mi sandwich meats taco night in these Banh Mi Style Pork Tacos!  Easy to make and bright with flavor, you'll want to make every night Taco Tuesday!

In a small bowl, combine the carrot celery root and cucumber with the vinegar and sugar.  Toss and refrigerate until ready to use, but at least 30 minutes.  If you haven’t ever tried celery root before, this is an awesome first recipe.  It’s perfectly crunchy and mild!

In another small bowl, combine the jalapeños with vinegar and honey.  Set aside.

Bring the oil in a large skillet to medium high heat and add the pork.  Cook breaking it up until the pork is no longer pink.  Add in the soy sauce, sugar and scallions continuing to cook until well mixed.  Pour in the mayo-sauce and stir to combine.  Remove from heat.

To assemble the tacos, layer the pork with the pickled veggies, jalapeños, fresh basil and a squeeze of fresh lime.   Garnish with additional sriracha for added heat and serve immediately.

Banh Mi Style Pork Tacos

Banh Mi Style Pork Tacos

Yield: 4 servings

The traditional Vietnamese Banh Mi sandwich meats taco night in these Banh Mi Style Pork Tacos!  Easy to make and bright with flavor, you'll want to make every night Taco Tuesday!

Ingredients

  • Pickled Veggies
  • 1/2 cup shredded carrots
  • 1/2 celery root, peeled and thinly sliced
  • 1 English cucumber, cut into thin strips
  • 2 Tb. rice vinegar
  • 2 Tb. sugar
  • pinch of salt
  • Pickled Jalapeños
  • 2 sliced jalapeños, ribs and seeds removed
  • 1 Tb. rice vinegar
  • 1 Tb. honey
  • Pork:
  • 1 lb. ground pork
  • 1 Tb. oil
  • 2 Tb. soy sauce
  • 1 tsp. sugar
  • 3 scallions, thinly sliced
  • Mayo Sauce:
  • 1/2 cup mayo
  • 2 Tb. sweet chili sauce
  • 1 Tb. sriracha
  • For the tacos:
  • 1 package La Tortilla Factory’s Non-GMO Hand Made Style tortillas
  • 1/3 c. fresh purple basil
  • Lime wedges

Instructions

  1. In a small bowl, combine the carrot celery root and cucumber with the vinegar and sugar.  Toss and refrigerate until ready to use, but at least 30 minutes.
  2. In another small bowl, combine the jalapeños with vinegar and honey.  Set aside.
