Yeah, yeah. Back to school. I get it. We get it. And, I have plenty of back-to-school ideas and recipes in store to share with you. But you know what else is around the corner? Football.
I get excited when it nears football season. And not because of the game. Sure, I’ll cheer on my team (especially in a winning season!), but what really floats my boat is the food. I know you all are shocked. Shocked.
Anywho, the upcoming football season is what I was thinking about when I whipped up this delicious Veggie & Black Bean Sheet Pan Nachos recipe. Not only is it the perfect app to share with your fellow fans, but it’s the recipe to whip up when you’re feeling lazy! And if I’m in the mood for nachos, there’s a good chance I’m feeling lazy, too. Ya know what I mean?

Veggie & Black Bean Sheet Pan Nachos
Preheat your oven to 425 degrees. Finely mince peppers and onions
Grease your largest rimmed baking sheet (I love this one!) and cover with nacho chips. Sprinkle on half of the cheese.
Top with peppers, onions and black beans. Top with the remaining cheese. Bake for 8-9 minutes, or until the cheese has melted and the top nachos have a golden color.
Remove from the oven and top with tomato, avocado, and hot sauce, if desired. Serve immediately. Get the mini tongs pictured above here.

- 1 bag of tortilla chips
- 2 1/2 cups shredded cheddar cheese
- 1 red bell pepper
- 1 orange pepper
- 1 poblano pepper
- 1/2 red onion
- 1 can of black beans, rinsed and drained
- 1 tomato, chopped
- 1 avocado, chopped
- Optional: Hot sauce
Instructions
- Preheat your oven to 425 degrees.
- Finely mince peppers and onions
- Grease your largest rimmed baking sheet and cover with nacho chips. Sprinkle on half of the cheese.
- Top with peppers, onions and black beans. Top with the remaining cheese.
- Bake for 8-9 minutes, or until the cheese has melted and the top nachos have a golden color.
