Have you ever tried panfrying or sautéeing dinner only to have a charred mess in the skillet and a kitchen full of smoke? Yup, I’ve been there. Totes McGoats. That was, until I learned how to decipher which oils to use for different cooking applications. Smoke point matters, y’all.

In this recipe for Freezer-Friendly Homemade Black Bean Quinoa Patties, we’re using Mazola Corn Oil which you can find at your local grocery store nationwide. With a smoke point of 450°F, it can stand up to the heat better than your average cooking oil. No more smoking out your kitchen!

Beyond replacing butter with corn oil in this recipe, we’re getting a major protein boost from black beans and quinoa. Trying to stick to that “eat more veggies” promise I made for the new year. We’re not going full on vegetarian (I love bacon way too much), but even making small swaps a couple times a week helps!

Instead of a dairy based yogurt or cream sauce, I whipped up an avocado crema to give the perfect spicy-tangy topper for our Black Bean Quinoa Patties.

Freezer-Friendly Homemade Black Bean Quinoa Patties

Cook quinoa according to package directions. Allow to cool completely prior to mixing with other ingredients. If you’re short on time, pour the quinoa out onto a large plate and place in the freezer to speed things up.

Mix cooled quinoa, drained black beans, eggs, shallot, red pepper, cilantro, garlic, cheese and spices together. Add just enough bread crumbs so that the mixture forms patties without crumbling apart. A few tablespoons should do the trick.

In a large skillet add 2 Tb. corn oil. Heat over medium-high heat until shimmering. Gently place 5-6 patties and allow to cook 3-4 minutes per side, flipping carefully. Once golden on both sides and warmed throughout, place on a plate lined with paper towels to allow the excess oil to dry off. Continue the process with remaining patties.

Freezer-Friendly Homemade Black Bean Quinoa Patties

Yield: 12 patties

Ingredients

  • 1 cup uncooked quinoa or 2 1/2 cups cooked quinoa, cooled
  • 15 oz. black beans, drained and rinsed
  • 3 eggs
  • 1 shallot, diced
  • 1 small red bell pepper, diced
  • 3 Tb. cilantro, chopped
  • 2 cloves garlic, minced
  • 1/2 c. sharp cheddar cheese, shredded
  • 1/2 tsp. chili powder
  • 1 tsp. salt
  • 1 tsp. smoked paprika
  • 3 Tb. - 1/4 cup whole wheat bread crumbs
  • 3-4 Tb. Mazola® Corn Oil
  • Avocado Crema Ingredients
  • 2 avocados, cut into large chunks
  • 1 bunch of cilantro
  • 1 lime, juiced
  • 1 jalapeno, diced
  • 2 Tb. corn oil
  • salt to taste

      It’s easiest if you cook them first – then either microwave them or warm them in the oven!
