My cooler-than-me trainer asked me what I’m doing this morning during my workout.  He had big plans to party in the city.  I thought for a second… yard work, football, and a drink on the patio with friends?  Sounds about right.  His response?  Sounds like a typical American weekend.  Yup.  And, I can’t wait.

What’s more American than watching college football?  Even better when you get to do it with good friends, great food, and a Coca-Cola® in your hand?  Not much.

We’re cooking up some Coca-Cola® and Pineapple Glazed Chicken Skewers for the game, so I headed to Walmart to get my supplies.  Did you know that Share a Coke is back in Walmart with some new offerings? In addition to 20 oz. Share a Coke bottles featuring over 1,000 first names, you can also purchase bottles of Coca-Cola® and Coca-Cola® Zero Sugar with your favorite football team logos!  I grabbed as many as I could – we plan to watch a lotta football this fall.

In addition to a tasty game-time beverage, I’m using Coca-Cola® as a recipe ingredient, too. When paired with pineapple juice, it makes the perfect not-too-sweet and oh-so-tangy glaze.  Our Coca-Cola® and Pineapple Glazed Chicken Skewers, prepared with chicken thighs, stay moist even if you overcook them due to an exciting game.  You can also cook them on the grill or in the oven.  Gotta say, I like a flexible recipe. 

No excuses for not having great food! 

Tips to make the perfect Coca-Cola® & Pineapple Glazed Chicken Skewers

Try to ensure the chicken sit in the spices for a bit.  This makes sure each bite has great flavor seared in. But, if you’re in a time crunch.  Don’t stress.  The glaze adds lots o’ flavor too!

If you’re the planning sort, like me, you can make the glaze while the chicken is marinating.  If it sets before you need to use it as a glaze, just re-warm it over low.

Use a plastic basting brush for glazing.  It’s so easy to clean!

Glazed Chicken Skewers

These Coca-Cola® & Pineapple Glazed Chicken Skewers make the perfect game time treat.  Served with Share a Coke bottles with team logos, you'll be fueled for a great game!

Ingredients

  • 2 lbs. boneless, skinless chicken thighs trimmed and cut crosswise into thirds
  • 1 Tbsp. ground cumin
  • 1 Tbsp. dried oregano
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 1/2 cup pineapple juice
  • 1/2 cup Coca-Cola®
  • 1 Tbsp. cornstarch
  • 2 Tbsp. water

Instructions

  1. Combine chicken with cumin, oregano, salt, pepper, and olive oil in a large mixing bowl. Toss to combine. Allow to marinate in the refrigerator for at least 30 minutes or up to a few hours.
  2. Prepare the glaze: Combine the pineapple juice and Coca-Cola® in a small saucepan. Bring to a simmer. In a small bowl, whisk the cornstarch and water. Stir into the sauce pan and continue to cook until thickened.
  3. Place an oven rack five inches from the top and preheat the broiler to high.
  4. Line a baking sheet with aluminum foil and place an oven-safe wire rack on top. Coat the rack with cooking spray.
  5. Thread chicken onto metal skewers and place on the prepared wire rack.
  6. Broil the chicken for 5 minutes, and remove from the oven. Flip the chicken and brush with the glaze.
  7. Return the chicken to the broiler for another five minutes. Remove the chicken and brush with the glaze. Cook for another 3-5 minutes or until the chicken is cooked and charred in places.
